INGREDIENTS:
1 2/3 pounds of ripe tomatoes
1 stalk of wild celery or cutting celery (or 1 stalk of celery with leaves)
1 carrot, finely sliced
1 medium onion, minced
2-3 cloves of garlic
7 cups of water
3/4 cup of soup pasta
1/3 cup of olive oil
sea salt
pepper
PREPARATION:
If using thick stalked celery, clean well and slice very finely.

Peel the tomatoes and cut into large pieces. In a pot, combine tomatoes, carrot, celery, onion, and garlic. Add a little water and boil for 20 minutes. Puree the mixture in the processor bowl, and return to the pot. Add the olive oil and boil for 5 minutes longer. Stir in the pasta and remaining water, lower the heat, and simmer covered for 20 minutes. Remove from heat, add salt and pepper to taste, and allow to rest for 10 minutes before serving.

Serving suggestions: This soup tastes great with grated cheese on top. Here in Greece, we tend to use our locally produced hard, salty cheeses, but it's also very good with grated cheddar.

I had corn and shrimp soup for lunch. You can use the vegetable stock. Puree the tomatoes.etc.

Gently soften the carrots and celery and onion if you have them.
Add the tomatoes cubed potatoes and stock and simmer until potatoes are nearly cooked and add the pasta.
If you have any part bags of vegetables in the freezer add them also.
A vege soup is a great way to use up all those other veges that are getting past there fresh state.

Try this...

Par-boil the potatoes and pasta-you could throw them in at the same time because you will want to cook them for the same amount of time. They will cook roughly 5 minutes-depending on the pasta you use. Drain the starches well and then return to the hot pot you boiled them in-off heat. The hot pot will help evaporate any extra liquid.

Heat the veggie stock on low, covered.

Sautee the carrots & celery (onion and garlic-if you have) in a little extra-virgin olive oil or vegetable oil. Add salt and pepper and mix.

Add the tomatoes to the pan once then veggies have a little color and are mostly cooked.

Once the tomatoes are warm and have broken down a little more add a little wine-whatever you have about 1/4 cup.

Add the potatoes and pasta, (once the wine has reduced).

Mix all the veggies and the pasta into the large pot with the stock.

Heat the soup all the way through and let reduce.

Throw them together and add some spices, bring to a boil and then simmer for about 40mins to an hour.

SOUNDS GOOD, BUT ADD A CHOPPED ONION,CILANTRO OR PARSLEY AND 1 CAN OF THE TOMATO,NAMASTE
