It's hard to just pick one meal.

Right now fajitas sound good, so I'll say fajitas. Either with mushrooms or soy strips or just veggies, extra salsa, and guacamole. *drool*

Just a note, quorn is vegetarian but not vegan and veggie bouillon cubes are the same price as the chicken/beef ones. I have the Maggi brand, which is really flavorful and good even just as a cup of broth. http://www.bestdressedmeals.com/nirf/cm/...

Quorn is by far the best chicken substitute I have tried. After cooking it briefly in a pan with a bit of water or veggie broth, it can be used in place of cooked, cubed chicken in any recipe. It is good enough that I can make chicken salad out of it, and feed it to my omnivore friends. The texture is wonderful, and the flavor doesn't need to be disguised, even slightly, the way you have to do with some of the substitutes.

Also, vegetarian "chicken" flavored bouillon is expensive, but worth every penny. For any soup or stew that is usually flavored with chicken, it makes the taste exponentially better. Guilt free :)

Vegetable curry with--tofu if you like, grilled cheese sandwich with tomato soup, Garlic Naan or flat bread with Hummus, so much to choose from...

I really like soya chunks or flakes dunked and cooked in a good flavoured sauce and accompanied by roasted root vegetables.

Fried Spaghetti

8 oz. spaghetti
1 tablespoon tomato sauce
2 tablespoons oil
2 chopped garlic cloves
1/2 red onion, chopped
salt, pepper, Italian seasoning to taste

Boil the spaghetti until slightly firm.

While spaghetti is boiling, fry the onions and garlic in oil. Add salt and pepper and tomato paste.

Let everything cook for about a minute then add the freshly cooked spaghetti. Stir to make sure the spaghetti has been totally coated with the tomato mixture. Give it another 3 - 5 minutes over medium fire, covered. Stir once more then serve.

the whole line of frozen fake meat stuff by Morningstar Farms. i love the Grillers (veggie burgers) and Chikn nuggets!

Dr. Praeger's has good frozen vegetarian food. (I think it's mostly vegan, but am not sure.) I used to get it at Trader Joe's and Shop-Rite.
Very tasty and I think it's healthier than Boca or Morningstar products (which are also great). The Morningstar products can have ingredients like high-fructose corn syrup, which is not what people seeking healthy alternatives might expect!
Another good thing about Dr. P. is that the California Burgers, spinach nuggets, etc. also have vegetables. I love being able to prepare something quickly that covers the protein and veg bases in one shot.
