5 oz. Dried soya beans
6 cups water
2 tsps. vanilla
? cup sugar

Rinse soya beans 3 times. Cover with fresh water and soak overnight. The next day, rinse beans and remove any loose skins that may be floating in the water. Drain beans. Working in small batches, place beans in blender adding just enough water to get the blades working, blend until smooth and fine. Two or three minutes should be sufficient depending on the amount of beans. Repeat process until all beans have been blended. Pour processed beans into a muslin bag and squeeze until dry. Alternatively you can use a fine sieve. Pour strained soya bean milk into a really deep saucepan, it bubbles up like you wouldn’t believe. Simmer for 15 minutes over a low heat else it will become scorched. Stir often. Remove from heat and add vanilla and sugar to suit your taste. Cool thoroughly before chilling in the fridge.
