Question: hey. i really need some vegan breakfast ideas. i dont care how long it takes to make. but i would rather homemake it. low cal is preferred. and i actually enjoy it if it takes a while cause i love to cook. but i will take any ideas. and preferrably not smoothies but i will take the recipies anyway. thanks!

Vegan Breakfast Couscous With Fresh Fruit 2 servings
3/4 cup soymilk or rice milk (Read *NOTE)
1/4 cup unsweetened apple juice or unsweetened cranberry juice or unsweetened white grape juice or unsweetened orange juice
1/2 cup whole wheat couscous
1/2 banana, peeled and sliced
cinnamon or cardamom
salt, to taste (optional)
# In a small pot on high heat, bring the milk substitute and juice of choice just to a boil.
# Reduce heat and stir in the couscous with a fork. Cover and simmer for 2-3 minutes.
# Turn off heat, leave pan on element, and allow to stand a few minutes.
# If desired, season with salt. Serve with fresh fruit and a sprinkle of cinnamon or other favorite spice.
# Yield: 1 medium or 2 small servings.
Vegan Breakfast Sandwiches 6 servings
1 lb firm tofu, drained and sliced into 6 even slabs
6 slices vegan sausage patties, pressed thin
1/2 cup soy flour
1/2 teaspoon garlic powder
1/4 teaspoon turmeric
1/4 teaspoon sea salt
1/4 teaspoon black pepper
4 tablespoons vegetable oil
vegan margarine
6 vegan American cheese (Tofutti singles)
6 English muffins, toasted
1. Heat 1 tbsp of oil in a skillet over medium heat. Fry the sausage on both sides until browned. Place on a plate with paper towels to drain and keep the plate in a warmed oven.
2. On another plate, combine the soy flour, garlic powder, turmeric, salt and pepper. Dredge the drained tofu in the mixture and make sure all sides are evenly coated.
3. Heat the remaining oil in the pan and in 2 batches, fry the coated tofu until browned, about 3 minutes on each side. When they are done, add to the plate of sausages in the oven to drain excess oil and to keep warm.
4. Toast and butter the English muffins. Assemble the sanwiches with the sausage on the bottom, tofu in the middle, and slice of soy cheese on the top.

INGREDIENTS
* 1 1/4 cups bran flakes cereal
* 1 1/4 cups all-purpose flour
* 1/3 cup brown sugar
* 1 teaspoon ground cinnamon
* 1 tablespoon baking powder
* 1 1/4 cups apple juice
* 1/4 cup margarine, melted
* 1 teaspoon vanilla extract
* 1 apple - peeled, cored and chopped
DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C). Grease muffin tins.
2. In a mixing bowl, combine bran flakes, flour, brown sugar, cinnamon and baking powder. Stir in apple juice, margarine, vanilla, and apple. Spoon the mixture into the greased muffin tins.
3. Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes.
Easy Vegan Whole Grain Pancake 4 serves
INGREDIENTS
* 1/2 cup whole wheat flour
* 1/2 cup rye flour
* 1 tablespoon soy flour
* 1 tablespoon white sugar
* 1 1/2 teaspoons baking powder
* 1/8 teaspoon salt
* 1/8 teaspoon ground cinnamon (optional)
* 1/2 teaspoon vanilla extract (optional)
* 1/2 cup water
* 1/2 cup soy milk
* 1/4 cup chopped pecans
DIRECTIONS
1. In a medium bowl, stir together the whole wheat flour, rye flour, soy flour, sugar, baking powder, salt and cinnamon. Make a well in the center, and pour in the vanilla, water and soy milk. Mix until all of the dry ingredients have been absorbed, then stir in the pecans.
2. Heat a large skillet or griddle iron over medium heat, and coat with cooking spray. Pour about 1/3 cup of batter onto the hot surface, and spread out to 1/4 inch thickness. Cook until bubbles appear on the surface, then flip and brown on the other side. Serve warm.

I like flaxseed pancakes, with maple syrup and vegan margarine

oatmeal w/ berries or peaches w/ soy milk and cinnamon and brown sugar...really any kind of fruit i.e. raisins, apples, etc.you can add shaved almonds or walnuts.

Well bacon & eggs is right out I guess.
How about granola bars, (cereal without milk)?
Any kind of fruit or juice is OK.

whole wheat pankakes are scumptious and although I'm not vegan I eat vegan food alot. Spinach with cream sause is great and There are websites for these ideas like veganchef.com

This is very weird but tastes soooooo good.
Peanut Butter and Jam on a Bagel (plain or sesame seed), w/ frozen fruit, powder drink, water blend (fruit drink)

These are soo yummy! Not sure if they're low calorie though.

Banna Buckwheat Pancakes
(makes 18 three-inch pancakes)

2 cups plain soymilk, divided
2 tbs fresh lemon juice
1 cup buckwheat or whole wheat flour
1 cup flour
1 1/2 tsp salt
1/2 tsp baking soda
2 tsp egg replacer powder
2 tbs canola oil
2 tbs maple syrup, plus more for serving
2 bananas thinly sliced

1. Mix 1 3/4 supd soymilk with lemon juice in small bowl. Let stand 5 minutes.
2. Combine flours, baking powder, salt, and baking soda in medium bowl.
3. Whisk egg replacer and remaining 1/4 cup soymilk in small bowl. Add to soymilk mixture. Whisk in oil and maple syrup.
4. Stir flour mixture into soymilk mixture. Fold in bananas.
5. Lightly oil griddle, and heat over medium heat. Pour 2 tbs batter over griddle for each pancake, and cook tow minutes, or until batter bubbles and pancakes begin to brown around edges. Flip and cook two minutes more. Serve with maple syrup.

Tofu French Toast

Makes 6 pieces of toast

8 ounces of low-fat tofu
1/2 cup water
1 teaspoon sweetener (molasses or maple syrup)
1/2 teaspoon cinnamon
1 banana
6 slices of whole wheat bread


Mix all ingredients except for the bread in a blender until smooth:

Pour blended mixture into a shallow dish.

Dip the whole wheat bread into mixture and cook on a non-stick pan.


Almond Crusted French Toast With Strawberries

(4 servings)


12 slices brioche or challah bread
1 cup finely ground roasted almonds
1 cup strawberries
3 large eggs
1/2 cup vanilla yogurt
1/2 cup milk
3 Tablespoons Butter
Create strawberry topping: stem and slice strawberries; toss with sugar. Set aside.

In a large shallow bowl, layer the ground almonds.

In a medium bowl, whisk together eggs, yogurt and milk until well blended.

Heat the butter (1/2 Tablespoon per French toast slice) in a large skillet or griddle until the butter is melted and foamy.

Dip each slice of bread into the egg mixture, then into the ground almonds and cook over medium heat until lightly browned on both sides (approx. 2 1/2 to 3 minutes per side).

Serve warm with strawberry topping

I often have Whole Soy & Company soy yogurt with granola.

when i'm in a hurry I make a rice protein shake from chocolate flavoured rice protein, rice or almond milk and a little bit of coffee

Quinoa Porridge

? Cup Quinoa
? Cup Rice Milk
? - 1 Cup Water
? tsp Cinnamon

In a large saucepan combine Quinoa, rice milk, water and cinnamon.

Cook on medium heat, with cover until all liquid is absorbed.

I have added oatmeal as well and it tastes great.

Slice Tempe 1/8 of an inch thick and as long as you can.
Mix 2 Tablespoons of Maggi sauce with 1 teaspoon of Artificial Smoke. Dip the sliced tempe into the sauce and fry until golden brown.

If you do not like to use Maggi seasoning it can be removed from the recipe. Or substituted with some shitake mushroom powder.

Artificial Smoke is a liquid seasoning that impart the flavor and scent of smoke into food.
The process of making Artifical Smoke consists of capturing the smoke of smoldering wood and then condensing the smoke in condensers. Additional refinement of the condensed smoke may consist of the addition of water, purification or aging in wood barrels.

Another breakfast idea is vegetable fried rice, I often make this but greatly reduce the amount of rice that is used and bulk up the dish with finely chopped tempe, tofu, and bean sprouts.. Once these three items are chopped and cooked they almost look like rice grains so it is a good way to reduce the amount of carbohydrates in the dish while fooling your eyes into thinking that it is a high carbohydrate dish.

Serve with hashbrowns or home fries, whole grain toast and fruit. There's a breakfast that'll keep you full for hours. I add salsa to mine for extra addiction-inspiring yumminess.

This last week we've had, cereal w/ soy milk (though normal, not an everyday breakfast in our house), oatmeal, bluberry buckwheat pancakes, chocolate chip whole wheat waffles, this oatmeal porridge (halfway prepared for tomorrow morning), yes fruit smoothies, whole grain, coconut, goji berry muffins, and wanting to make this coming up week an onion, potato, tofu, brown rice, bell peppers camping style skillet thingy!! And some type of fruit added to each breakfast! Still trying my hand at making homemade yogurt, since it's soy version is pretty expensive when only one store in my area sells it! When I do figure it out, that will add on to the breakfasts!!
