I'd go for a bit of cornflour, or a commercial egg replacer (which I think are mostly cornflour anyway). The flour in rosti should be fine to bind on their own (I've made recipes for potato pancakes from non-vegan recipes that don't have any eggs at all).

Actually, there are loads of similar websites, so you could always browse away for 'vegan rosti' or 'vegan fritters' etc.

I blend linseeds sifted from bread baking flour packet very finely with a bit of water. Then I freeze this soft paste into icecube trays. Its easy to put into anything for binding and very high in vitamins. 1/4 cup = 1 egg.
