Answers: How do you keep it all straight? No honey because of bee's-no wine-nothing with gelatin. Do you have to think through everything before you eat it? This is a serious question not a slam.
Yes, you do need to put a lot of thought into what you eat, but this mostly just means preparing your own food and not eating out as much which I am finding to be a good thing. It's amazing how much we trust others with what we put in our bodies. You definitely get used to it, though, and it becomes second nature to know what to eat when you're away from home or shopping.
I think through as much as possible, but not everything. I really look for the biggies: dairy, eggs, meat broths, meat extracts, honey, beeswax, propolis, and carmine, to name a few. You eventually get to learn what's okay and what's not, but it does take practice.
There are plenty of wines vegans can have. Gelatin isn't that big of an ingredient, save for some candies.There aren't thousands of hidden un-vegan ingredients lurking in strange places. Once you know the basic ones, it's easy. Also it maybe forces you to eat a bit healthier, because instead of eating bread with 25 weird ingredients, you end up eating bread with 3. It's something you get used to and comes as second nature eventually.
My wife and I go to a specialty market to do our shopping. Finding a specialty market is essential for a vegan. Once you get into the groove of shopping and knowing what you are buying it becomes very rewarding knowing that you are putting only good food with out any animal products in your body. I have been a meat eater all my life until 3 years ago and the foods that they have now are very similar to meat, so nothing is missed except the heart clogging meat and the cruelty.
At first you may have to think through but then once you realize what is and isn't against your morals it's like second nature.
After a while it becomes effortless and feels like you've lived that way your entire life.
You also learn how to make better vegan food.

personally, i dont understand how people can just eat any old rubbish and just hope for the best...
Very simple, we don't buy non-vegan products. Therefore, when I reach for something to eat, cook with, drink etc., it's all vegan.
You mean when shopping? Well, basically, the general rule of not eating things of which you do now know what they are works very well. If you read the ingredients and see something weird on there, don't eat it until you research about it. You might read "xanthan gum" and say, what the hell is that. Then read about it and find that it's okay. It doesn't take long before you know your stuff about ingredients.
Vegan or not, why would you not want to know what you are eating? Because, ignorance is bliss? Correct? Plug your ears and say "La la la la la I can't hear you la la la..." and your life will be a very easy one and you won't have to use your brain at all.
See, you will find that most vegans are thinkers. You will find that most vegans are the ones that Ask Questions. You will find that most vegans Want To Know. Becoming vegan seems to be an inevitability of the inquisitive mind. Eventually a person will come to the food they eat and wonder, "Hm, what is this stuff that I am eating, how is it made, where did the ingredients come from, are there ingredients within the ingredients, etc." this would lead to "How does my body digest food, what kind of food is best, what is healthy and not..."
You just do what you can and pretend the transgressions aren't happening.
