What is a good entree for a vegetarian thanksgiving besides squash?!


Question: we always do lasagna, vegetables (any kind), mashed potatoes (no gravy or do veggie gravy), rolls, you can do so much! ive never tried Tofurkey but the lasagna is a good substitute main dish.

Eggplant and Basil Lasagne. Boil eggplant until soft but not mushy. Use sliced eggplant as your noodles. Layer with sauce, fresh basil leaves, and mozzarella cheese. Bake until bubbly. Yum!

TOFU TURKEY...had it twice and loved it...

my mom always made me a veggie lasagna, but I was ok eating cheese, whereas some vegetarians are not. The eggplant dish sounds yummy. Along those lines you can aso make eggplant rollatine.

1 lb. macaroni, cooked
1 c. whole corn
1 c. tomatoes
1 c. green peas
1/2 c. celery
1 can pimiento
1/2 tsp. red pepper
1/2 tsp. oregano

Place 1/2 of cooked macaroni in baking dish. Add vegetables one at a time. Cover with shredded Cheddar cheese. Add remaining macaroni and top with Parmesan cheese. Bake for 45 minutes at 350 degree.

1 very large onion, chopped
5 cloves garlic, crushed
2 sweet potatoes, peeled and quartered
1 lb. string beans
4 carrots, peeled and sliced
1/2 c. raisins
3 tsp. curry
1 med. eggplant, peeled, diced small
3/4 c. water

Saute onions and garlic in water in a large saucepan, until transparent. Add remaining ingredients except string beans. Cover and saute until potatoes and carrots are tender. Add string beans and cook for 10 to 15 minutes longer.

WILD RICE CASSEROLE

1 c. grated cheddar cheese (save some for top)
1 sm. can chopped ripe olives
1 (16 oz.) can canned tomatoes (no salt added)
1 c. fresh sliced mushrooms
1/4 c. chopped onions
1 c. wild rice (washed & soaked overnight)

Combine all ingredients in a 2 quart casserole. (Chop tomatoes and use liquid from the can.) Sprinkle extra cheese on top and bake at 350 degrees for 1 hour.

This is an easy question and the answer is: Tofurkey. It tastes better than a real turkey and is 100% vegan and delicious. Any local health food store should have it or contact Tofurkey. Good luck!

Yep, I can hardly wait for that Thanksgiving Day Squash. EWWWWWWWWWWWWw . . . a vegetarian Thanksgiving . . .how disgusting.

I'm hosting Thanksgiving this year and my fiance is vegan. I have no idea what to make as an entree (for him -- the rest of us will be having turkey); I was kinda hoping to find an answer here! All of my side dishes (except the gravy) will be vegan, though.
