What can I make with mung beans?!


Question: I have a pack of mung beans with the hulls still on. I thought I'd use it for mung dhal, but it turns out you're supposed to get hulled ones for that. What can I do with the unhulled beans? All I could think of was bean sprouts, which is ok, but I'm not sure I can finish a whole packet...

Do you know any supper dishes or salads? Failing that, do you know any other interesting things I can do with them (performance art, or taking over the world, maybe)?

Well Vietnamese people have a great dessert recipes with using only mung beans, milk, and sugar.
(I'm Vietnamese)
first you boil about half a cup of mung beans in water.
just until they become soft and a bit larger.
drain the water out.
put the mung beans in a cup or bowl.
pour some milk in it..it depends on how much u want. soupy is better though.
add sugar according to your taste.
u can eat it cold with a couple ice cubes, or warm in the microwave!

MUNG BEAN NOODLES

1 onion, sliced 1/4 c. cooking oil 1 stewing chicken, cut into serving pieces 6 c. water 2 stalks leeks, thinly sliced 2 stalks celery, thinly sliced 1 carrot, thinly sliced 1 tsp. fish sauce 1 tsp. salt 1/4 tsp. black pepper 10 pieces dried mushrooms soaked in water 1 (8 oz.) pkg. Mung bean noodles
Soak Mung bean noodles in water and cut in 4-inch lengths.

Stir garlic into the hot oil, then add onion and saute. Add the chicken pieces and fry for 5 minutes. Pour in water and add the leeks, celery, and carrots.

Bring to a boil; season with fish sauce, salt, and pepper. Cover and cook until chicken is almost tender. Add mushrooms and Mung bean noodles. Let boil for another 10 minutes or until noodles are tender. Serve hot.


MUNG BEAN OR ALFALFA SPROUTS

1. Soak seeds overnight in lukewarm water.
2. DRAIN water. Rinse 2 times with lukewarm water. DRAIN. (Cool to warm 60 to 75.)

3. Store in a dark place (or in a bag).

4. Rinse seeds twice every day; morning and night. (More often is okay; less often leads to decay.)

5. When sprouts are about 3" long, expose to sunlight about 1 hour, to develop green color if desired.

6. Serve on salads, sandwiches, or just enjoy.

Look for a Korean food site and find 'Bin dec duc'. (The spelling may vary.) It's a pancake sort of thing with mung beans and kimchi and it's quite good.

If you grind down the mung beans into flour in a blender you can use it to make Japanese "mochi" or Malaysian rainbow cake "kueh lapis". Its healthier addition to plain glutinous rice flour in these desserts.
