I love burritos. Tortillas, rice, beans (not meat-based) guacamole, salsa, jalapenos.

It's great that you're being such a caring friend!

Hummus is always a winner. Cook your own dried chick peas in the crock pot. They are cheaper, and better than canned, and your hummus will be smoother. Add lots of roasted red peppers, olive oil, tahini, and some garlic. YUMMY. Serve with toasted vegan pita, or sliced fresh veggies.

A fruit tray would be good.

You should be able to get vegan friendly tortilla chips at the health food store, and serve them with salsa.

Make your own potato skins, and toast them in the oven with an olive tepanade.

There are some nice recipes for stuffed bell peppers that are vegetarian. And I've seen some great recipes for vegetarian and herbal pizzas.

Or you could have a traditional vegetable tray with dip.

Here is a recipe I was shown on one of my gardening lists:

Heirloom Tomato Salad
From Farmstand Fresh


Serves 8 Active: 20 min/Total: 20 min

balsamic vinaigrette
3 Tbsp extra-virgin olive oil
2 Tbsp balsamic vinegar
1 tsp minced garlic
1a??2 tsp salt
4 lb assorted heirloom tomatoes or other garden-fresh tomatoes
1a??2 cup tiny globe or bush basil leaves (or larger leaves, torn small)
1a??2 tsp freshly ground pepper

1. Vinaigrette: Whisk ingredients in a 2-cup glass measure until blended.
2. Core, then slice tomatoes about 1a??3 in. thick. Arrange on serving platter. Tuck some basil between slices. Scatter rest over tomatoes.
3. Whisk Vinaigrette. Drizzle over tomatoes through a small strainer (discard garlic); sprinkle with pepper. Serve at room temperature.

Here is a tasty holiday dream recipe, from another list:

MotherHerb's Holiday Tea Blend

3 cups spring or distilled water
1/3 cup organic, natural sugar
1 cinnamon stick
4 cloves, whole
2 orange spice tea bags
1/4 cup brandy

Boil water in saucepan and slowly add loose tea and spices. Cover and
reduce heat. Let simmer for 5-6 minutes. Remove from heat and throw
away tea bags. Add brandy and sugar. Stir until sugar dissolves
completely. Serve with a dollop of real whipped cream for a special
treat. :)

Speaking of herbal pizza recipes, here are a couple:

HERBAL PIZZA RECIPES

Lauriea€?s Neapolitan Pizza with Fresh Basil

1 pre-prepared pizza crust of choice

2 large red tomatoes peeled, seeded and sliced thin

1 cup fresh whole basil leaves, washed and dried

4 cloves minced garlic

1/2-pound mozzarella cheese, grated

2 tablespoons fruity green olive oil

fresh ground pepper

Preheat oven to 450. Arrange tomato slices and basil and oregano over pizza
dough. Sprinkle with minced garlic. Spread mozzarella cheese over evenly and
drizzle with olive oil. Top with grated black pepper. Place in oven and bake
for 15-20 minutes.

Vegetable Pizza with Pesto Sauce

1 pre-prepared pizza crust of choice

1 small jar classic sun dried tomato pesto

1-cup mozzarella

1/2 cup each sliced zucchini and summer squash

1/2 cup sliced onions

Italian dressing to taste

Feta and Parmesan cheese to taste

Preheat oven to 425. Spread sun dried tomato pesto over a pizza crust. (May
choose to use traditional basil pesto sauce). Sprinkle mozzarella cheese over
the top to taste.

Meantime, mix together the vegetables and pour onto roasting pan. Drizzle
with Italian dressing lightly. Put into oven and roast lightly. Then spread
roasted vegetables over pizza top. Sprinkle with Parmesan cheese and bake 15
minutes.

Herb and Goat Cheese Pizza

1 - 10 ounce whole-wheat pizza crust

1-tablespoon extra virgin olive oil

1 medium red onion thinly sliced

3 medium tomatoes, sliced

4 ounces goat cheese, crumbled

12 fresh sage leaves, cut into 1/4 inch slices

1-tablespoon fresh thyme leaves

1 tablespoon snipped fresh rosemary

Preheat oven to 450. Place prepared pizza crust on baking sheet.

In a large skillet, heat olive oil and saut/ onion for 5 minutes or until
tender. Spread onions evenly over pizza crust then top with tomato slices. Top
with cheese. Bake for 5 minutes. Sprinkle with herbs evenly over pizza.
Return to oven and bake for 5 more minutes or until tomatoes are hot and cheese
has melted.

Ricotta Cheese and Herb Pizza

1 pre-prepared pizza crust

2 tablespoons of fresh minced basil

2 tablespoons of fresh minced thyme

2 tablespoons of fresh minced oregano

2 green zucchinis finely sliced

2 yellow zucchinis finely sliced

Freshly ground black pepper

1/2 cup grated Parmesan cheese

1-1/2 cup ricotta cheese

Place the pizza dough on a greased pan or cookie sheet.

Blend together the ricotta cheese and fresh herbs and spread on the pizza.
Next, arrange the zucchini back and forth across the cheese layer, alternating
from yellow to green.

Season with black pepper and sprinkle with Parmesan cheese.

Bake for 20 minutes.

And here is a wonderful cold vegetable soup:

White Gazpacho

3 large cucumbers, peeled, seeded and chopped
2 cups chicken broth
1/4 cup green onion, chopped
1 garlic clove, minced
1 cup plain yogurt
2 cups sour cream
1 Tbsp. vinegar
1 Tbsp. fresh dill
Salt and pepper to taste
Fresh tomatoes chopped for garnish
Croutons for garnish

Combine first 9 ingredients together in a food processor and process
until smooth. Chill until ready to serve. Pour into serving bowls and
garnish with tomatoes and croutons.

you dont have to go all out, just call them and ask what they like. then search for the recipe on google.

what bout those little things next to the sushi in the deli?? they are carrots, cucumbers sliced i think in thin shoestring style, wrapped in some kind of lettuce or something. you can dip them in the sause they sell there too., i really dont know waht they are called but they are really good.

Falafel balls - falafel mix with water, form into balls, deep fry. Tasty.

Also, you can't go wrong with veggie samosas. I don't know how to make them, but they're cheap to buy - here in Vancouver they go for about $1 for four at a cheap place.

You didn't mention whether you were looking to cook a whole vegan meal or just make snacks.

For a light dessert I boil apple slices, remove the skins, and top them with organic cinnamon. Tastes like apple pie.

OK many vegans love beans. for a snack i eat pinto beans on a taco shell....if that helps.

I find that potatoes cut fairly small with little julienne cuts down the side roasted in olive oil with a vegan friendly gravy always goes down a treat.

Or roasted eggplant, capsicum, mushrooms and zucchini on little bread rolls baked in the oven for 5 minutes with tahini drizzled over the top.

Or try quinoa as a dip with cranberries in it, using vege chips, snap peas, carrots and/or other veges to dip.

Pita and hummus is always a winning combination. So are crudites with hummus. Get some chips and salsa as well. I think www.vegweb.com might have some party-type snack recipes available.

Try to find vegan nuggets, heat them up, and serve with ketchup or vegan BBQ sauce.

Yves makes a vegan taco crumble mix. You can heat that up in a skillet, chop some veggies like tomatoes, lettuce, onion, etc., shred some Follow Your Heart (vegan cheese) cheddar style and have your friends make their own tacos. Make sure the soy cheese you get does NOT have casein in it, as casein is a milk protein.

Sadly I don't have any vegitarian recipes much less any actual Vegan ones.
