well from my point of view ... i dont recommend vegetarian diet all by it self as it may be some kind of a crash diet that eventually might cause some severe damages inside your body

every thing need to be blanced as you need a sufficient amount of carbohydrate and protein even fats on daily basis

In my opinion a good healthy diet will be more efficient and last for a long period as you need to adjust your daily calories intake besides increasing your external fatburning tools (jogging,gym,cardio,any other modreate sports) but you must combine the two togather in order to reach your ultimate goal which is loosing fat while maintining your muscles not just loosing wieght

for lunch try vegtable pasta. egg sandwich. dinner, vegetarian burgers with pasta/rice. frut juice.

I suggest you consult a qualified dietition as many vegetarian diets lack the required daily nutrients for your body.

Eating lots of protein (to make up from not eating meat) from nuts, quorn, vegetarian meals etc, then the average balance of fat, carbs etc

That's a broad question and it would take some time to list all the foods that would contribute to a good vegetarian diet. Basically just eat as varied a diet as you can that doesn't include meat... different fruit and veg, different beans, different wholegrains (pasta, rice, bread), different nuts, different seeds. The more varied you keep it, the more nutrients you'll get. The only things you should actually make a specific effort to include are omega 3 and b12. Flaxeed is great for omega 3 and fatty acids and you just need a tablespoon a day which you can mix into cereal or any recipe. You can get your b12 from fortified foods such as soy milk and spreads which often contain other vitamins like calcium too.

Here are a couple Vegetarian Food Pyramids. There is a better one somewhere that actually gives the daily precentages you need as opposed to servings.
