How long should I marinade my veg?!


Question: I'm cooking chunks of the following on skewers tomorrow for lunch at about 1PM. Can I stick them in a marinade now or would that be too long (currently it is almost 10PM)?
courgette
aubergine
red bell peppar
spanish (mild) onion
tofu

please answer as soon as possible as it has been a long day and I've also been on the Rioja so I'm feeling a bit sleepy.

marinade in some nice juices from a roast dinner ideally pink lamb juices then they may have some nutritional value and you might get a sprint on at work and get evrything done on time for a change

marinade them now till cooking time gets more of the flavour in then

The longer you marinade the better it taste

That's why leftovers are so yummy

What are you using for your marinade? :-)

May I suggest baby portobello mushrooms as well? They are delicious when grilled.

marinading 4 hours before should be good enough, and not too overwhelming like overnight may be
