It's incredibly versatile, for one.

Pure vegetable protein, no cholesterol and no animal fat.
Easily digested, very versatile. It can be used as a substitute for many different types and styles of meat from chorizo sausage to ground beef.

It has a neutral flavor so it doesn't adversely flavor items and can be used as a liquid--as in soy milk or as a solid. It can be used in soups, lasagna, meat pies, Stromboli, pizza, sauces and so forth.

Note: Because I feel it is important to be well educated about all foods, I read completely through the information that one answerer gave--against the use of soy.

One site spoke of the use of soy with DOGS and their allergies, another about it's use with infants--but it stated that those over 6 months responded well to soy milk when allergic to cow's milk, while yet another study reported that over use of soy products can cause problems with thyroid sensitive people because of it's hormone affect--but the key issue in this question is what the health benefits are--not what overuse causes, or the ill affects of those who might have an allergy to soy.

People have allergies to all sorts of food stuffs but that doesn't mean that those foods aren't beneficial to others.

Even tho there may be a higher incidence of thyroid cancer in the Japanese population--that doesn't mean that everyone who supplements their diet with soy will have thyroid cancer.

As a person who takes food seriously, I get annoyed when I think that half truths are being used to make a whole truth. Anyone wanting to prove their own position will only quote information that they think bolsters their position, and sometimes end up shooting themselves in the foot.

When soy products are proven deleterious to the human population across the board, then they should be completely removed from the market. So far, that hasn't happened.

Loads of protein and calcium, too.
