check out the sites below. i saw some interesting side dishes. maybe he should "nosh" a little b4 , so he isn't starving at the meal and eat the couple of dishes you make to tie him over until later. it's so nice of you to care and make the effort for him. Happy Thanksgiving!

i dont think yam is a meat so serve him that and mashed potatoes

make him a lovely todookie instead of a turducken!

Yeah, make him a nice big tofu salad

Have him cheat that day and have a little turkey, it is good for him!

Here is a whole slue of recipes!

If he's vegetarian (lacto and ovo meaning he will consume milk and egg products) and not vegan (meaning absolutely NO animal products), then most of the sides that accompany any traditional Turkey dinner should be vegetarian. Sweet potatos, mashed potatos, cranberry sauce, that weird green bean and french onion casserole thing that nobody eats, corn, pumpkin pie...these are all vegetarian options. Even the stuffing is vegetarian if you don't stuff the turkey with it.
Ask the cook to use vegetable stock instead of chicken stock in their recipes as well. All of these things should be more than enough for any person to enjoy and be sufficiently full at the end of the meal. If you're still interested in making him something special then I recommend cooking up his favorite side dish, or ask him what he loves to eat at Thanksgiving dinners.

Make sure not to add marshmallows to sweet potatoes. It contains gelatin and vegetarians won't eat it. Also if you get stuffing- get the corn bread flavor- not chicken flavor because it does contain real chicken flavoring.

Glaze cooked carrots with honey and sprinkle with cinnamon and chopped walnuts. That's a great dish (if he isn't vegan).

Add cinnamon to sweet potatoes, as well.

Green bean casserole.

Homemade macaroni salad.

Boiled or mashed potatoes.

Fruit salad with lemon juice.

Put out chips and spinach dip. It's great with Sun chips.

try out this web. i believe they would have vergetarian cookbooks available!
