My teen is a vegatarian. We love eating soups in the fall and winter. I am looking for some good creamy soups to make for her that she will be able to eat. ( Esp broc n cheese ) Any ideas or suggestions would be greatly appreciated! Or even any simple vegan recipes!

BROCCOLI AND CHZ
1 (8 ounce) package of softened cream cheese,
1 lb. of processed cheese, cubed
1 (10 ounce) package of frozen chopped broccoli
1/4 c. of chopped red onion
1 tbsp. of margarine
2 1/2 c. of milk
Directions
First you need to melt butter in pan over medium flame.
Add onions and saute until onions are yellow.
Next add your milk and cream cheese, stirring until cheese is melted.
Finally, add cheese food. Once this melts and the soup is heated through, serve!
VEGETARIAN FRECH ONION SOUP
2 tbsp butter
1 tbsp vegetable oil
5 large onions, thinly sliced
1 tsp sugar
1 tsp salt, plus a bit more to finish
2 tbsp all-purpose flour
6 cups vegetable broth (homemade or canned, I may include a recipe at a later time)
1/3 cup dry sherry
1 1/2 tsp fresh thyme, chopped, or 1/2 tsp dried
black pepper to taste
6 1/2 inch slices of french bread
6 slices of a white, melting cheese (I used swiss) or 2 1/2 cups grated cheese (Gruyere or Jarlsberg are pretty tradtional)
Directions
In a pot over medium heat, melt the butter and the oil.
Add the onions, sugar, and salt and cook for 1 minute while stirring.
Reduce heat to medium-low and cook, stirring occasionally, until the onions have carmelized, which should take anywhere from 20 - 40 minutes
Add the flour and cook while stirring for 1 minute
Add the broth, sherry, and thyme and bring to a boil.
Reduce heat and simmer for 15 minutes.
Season to taste with the salt and pepper.
Preheat the broiler and broil the slices of bread until lightly toasted. Add butter to the bread if you'd like.
Put the soup in 6 ovenproof bowls and set them on a baking sheet.
Cover with the bread slices, which you may need to cut to fit.
Put the cheese on top of the bread slices.
Put the baking sheet under the broiler until the cheese is melted and bubbly.
CABBAGE SOUP
1/2 medium head cabbage, chopped
4 stalks celery, cut into cubes
1 sweet onion, finely diced
4 large carrots, cut into cubes
1 (14.5 oz) can tomatoes , peeled and finely chopped
1 1/2 cups tomato-vegetable juice cocktail
3 cups vegetable broth
1 (14.5 oz) can chicken broth
3/4 cup ketchup
Directions
Place the cabbage into an 8-qt soup pot.
Add the carrots to 2 tablespoons of water and microwave on high setting for 6 minutes.
Microwave celery in 2 tablespoons water on high setting for 4 minutes.
Stir the microwaved vegetables to the pot with the cabbage. Mix in the celery, sweet onion, and ketchup. Now, add the tomatoes, juice cocktail, and the chicken and vegetable broth. Fill each empty can with water, and add to the mixture. Cover, and bring to a boil, then continue boiling for 30 minutes.
Lower the heat to simmer and cook for 2-3 hours.
Serve with sliced French baguette. Place salt, black pepper, and Tabasco sauce at the table to season, as desired.

Vegans don't eat dairy so anything with cheese would be out. You can always substitute vegetable broth for chicken broth in recipes. There are some good vegan cookbooks and websites that have great recipes.
she can have cream based soups, and as for soups that call for chicken stock/broth, just use vegetable stock/broth instead, it's the same concept, you may need a bit extra salt and/or seasonings, but this substitution is great for veggitareans
Since she is a teen . . . why don't you encourage her responsibility in helping out by researching recipes for her chosen lifestyle.
WOW ... I guess we know who is in control in that household!
Well, if a recipe calls for chicken broth, use vegetable broth. Imagine Foods makes a No-Chicken Broth that's pretty good. If a recipe calls for beef broth, use mushroom broth or buillion. If your daughter does decide to go vegan, you can use soy milk in equal measure when a recipe calls for cows' milk.
To get other recipes, you can go to www.vegweb.com. I've seen at book stores a book called "A Beautiful Bowl of Soup." I don't have it, but you might like having a book of soup recipes.
Vegetable Soup (for 6)
All vegetables should be Organic
Two hours before preparing the soup, slice four (4) zucchini and soak in salt water for 2 hours, drain and set aside.
6 cups of pure water
6 vegetable bullion cubes
2 Tbsp Bragg’s Amino Acids
3 large garlic cloves finely chopped
2 large Maui or Vidalia or Walla Walla onions, finely chopped
1 ? bunch of parsley, finely chopped
1 package of organic Barley (cook separately, see below)
In this sequence, add the following:
6-8 celery stalks, including the tops, finely chopped
Chopped 1 cup string beans, chopped
2 large (or 4 small) carrots
The zucchini previously soaked and set aside
1 cup of frozen peas
1 cup of frozen corn
1 large can of chopped organic tomatoes (including the juice)
1 cup of broccoli tops
1 cup of cauliflower tops
Cook soup until vegetatables are done.
Cook barley according to package instructions. When the barley is done, scoop the barley into bowls and pour the soup over the top before serving. Do not add barley to the soup, as when you reheat it will burn.
Winter Solstice Vegetarian Chicken Noodle Soup
6 cups of pure water
? cup Vegetarian Chicken Soup Base*
6 organic celery stalks, chopped
1 ? cups sweet onion
6 carrots, chopped finely
1 package organic noodles (rice, corn or barley)
1 package of Quorn Tenders (Vegetarian Chicken pieces) (or Quorn Naked Breast cut up)
Sauté Tenders lightly in olive oil. Heat water, add soup base, stirring gently. Add vegetables, noodles (consider breaking them into 1-2 inch pieces) and Quorn Tenders. Simmer on medium heat until noodles are done. Enjoy after a warm bath on a cold night.
