Um..........Have you ever tried cereal.. just kidding. Veggie burgers are pretty good, they are sometimes in the freezer section of grociery stores. Some resturaunts also carry them.

Well... if you want to buy stuff at the store:
Cheesy bean burritos (sold in the freezer area)
Mac and cheese
Veggie Burgers (Morning star Grillers are the best)
Simply Asian Noodle bowls (check, cuz some flavors have meat)
You can always just boil pasta and put either pesto or regular tomato sauce on it and freeze little portions for lunches.
If you're going for the vegan thing... (I did that for 10 years). You're going to have to cook. No other way around it. So get some vegan cook books and get cookin. If you're hard up for some good recipes, contact me and I'll give you some. They're pretty good.
Pasta's with your favorite sauce.
Rice dishes with veggies and flavorful sauce
Mexican fiestas with nachos, burritos, enchiladas, etc.
Sandwiches with fake deli meat (tofurkey slices, Yves, etc)
Salads with croutons, nuts, cheese, avacado, cranberries, raisins, apple slices...you get the picture.
Being veggie does not have to be boring at all, infact quite the opposite.

Mushroom & Cheese Macaroni
Ingredients
400g wholewheat macoroni
60g butter or margarine
2tbs chopped parsley
450g mushrooms
60g grated cheese
Method
1. Cook macaroni according to manufacturer's instructions.
Slice mushrooms and fry in the fat for 8 mins then add the parsley.
Drain macaroni and mushrooms and toss together lightly.
2. Serve sprinkled with grated cheese.
Chunky Nut & Vegetable Roast
Ingredients
1 carrot, scraped
1 onion, peeled
1 stick celery
200g mixed nuts (e.g. almonds, peanuts, brazil nuts)
2tsp Marmite
2 free range eggs
1 or 2 tsp mixed herbs
salt & pepper
Dried breadcrumbs (for coating tin)
Method
1. Set oven at 190°C/375°F/Gas Mark 5.
Put all the ingredients into a food processor and process until vegetables and nuts are chopped into chunky pieces.
Put into a bowl and mix with remaining ingredients.
2. Line a 450g/1lb loaf tin with a strip of non-stick paper, grease well and sprinkle with dry breadcrumbs.
Spoon mixture into tin and level the top.
3. Bake uncovered for 45 mins until set.
Soubise is a kind of French risotto made with long grain rice instead of Italian, short rounded rice. Unlike risotto, it is not stirred during cooking but left to absorb the wine and stock as it gently simmers. I've added the fennel to the onion for an even sweeter, more delicate flavour and, if you wish, add sautéed mushrooms or spinach towards the end of the cooking time.
You could also serve it straight from the pan, simply garnished with fresh herbs, rather than bake it with breadcrumbs but this does give it a homely feel which makes it perfect for family meals.
60g/ 2?oz butter or margarine
600g/1lb 4oz onions, diced
2 cloves garlic, finely chopped (optional)
1 bulb fennel, chopped into 1cm/? in dice
500g/1lb Basmati rice
150ml/6fl oz dry white wine
350ml/12fl oz hot water or light vegetable stock
1 bay leaf
75g/3oz fresh vegetarian parmesan cheese
50ml/2fl oz double cream
125g/5oz fresh white breadcrumbs
1 bunch fresh chives, snipped very small
salt and freshly ground black pepper
Melt the butter in a pan and cook the onion and garlic gently, with the lid on, for about 30 minutes, adding the fennel about half way through, until tender but not browned.
Add the rice and stir for 10 minutes. Pour in the wine and hot stock together with salt and the bay leaf.
Bring to a simmer, stir and then cover the pan and cook for 15-20 minutes until the liquid is absorbed and the rice tender.
Remove the bay leaf and stir in the vegetarian parmesan and double cream.
Pre-heat the oven to Gas Mark 6. Lightly butter an ovenproof dish and fill with the rice mixture.
Sprinkle the breadcrumbs mixed with the chives over the rice and bake in the pre-heated oven for 15 minutes until the breadcrumbs are a pale golden colour.
Serve with a green salad and steamed broccoli tossed in olive oil and grain mustard.

take a can of black beans and put them in a pan with garlic and onions and a little oil, cook a little, and then add some sour cream. its sooo yummy, especially with rice
also tofu scramble
try homefries made with curry, salt, pepper, dill and soy sauce. it tastes really good. you can also cook tofu like that.

chop your fav raw veggies into 1" cubes, stir fry till hot, set aside, stir fry 1" cubes of extra firm silkken tofu, readd vegggie, pour soy or teriyaki sauce over all and heat in wok,, enjoy
here's a suggestion that should get you out of the day to day dulldrums ......
my fiance and i are always coming up with new ideas. my favorite one is noodles, tofu and vegetables. 1. boil whole wheat noodles. 2. cut firm tofu into squares, add stir fry sauce and cook until golden brown. 3. do the same thing with the vegetables. (i use green and red peppers, zucchini, squash, broccoli, and carrots. its SO good! you can also make spaghetti that way as well. using spaghetti sauce instead of stir fry! its great!
You could get the regular not-meat items that you usually get, along with tofu (if you like it), and maybe some meat free burgers, soy patties and the like. If you want microwave, get Amys stuff...theres pizza, enchiladas, burritos, soups, entrees, and even breakfasts..and they are all healthy and organic...everything on the ingredients is organic.
