Make yourself a stuffed potato! They're fun to make and easy.
Bake your potato, cut off the top, scoop out the inside and put it in a bowl. Steam your veggies and chop them up. Mix them into the potato filling with some spices. I usually add some kind of liquid to make it creamier, like a drizzle of goddess dressing or a little olive oil. Now put the vegetable/potato filling back into the potato shell. Viola! You are a gourmet!

with the vegetalbes and eggs you can make an omelet it is really easy just break two eggs into a dish and mix it up with a little milk or water, pour it into a pan and put a lid on it every few minutes check to see if the egg ( which should resemble a pancake ) is pluffy and dry on top not wet. then add you favorite vegetables to on half of the egg and fold the other half over the vegetables ( at this point it should resemble a sandwich with the vegetables between the egg. you can bake a potato in the microwave . take a whole unpeeled potato. wash it with water, spray or smooth just a little oil over the entire outside of the potato, pierce the potato by pokeing holes into it with a fork and place it on a microwave safe plate for about 6min. check to make sure the potato is soft when poked again with a fork. if it is then it is ready. split potato almost in two scoop out the filling add butter and cooked vegetables to potato or eat it with just salt and peper put filling back in potato and enjoy. for desert try a slice apple with peanut butter spread on each slice. you could also scramble your eggs and sautee your vegetables( that just means to fry them until they are tender in oil or margerine) mix the eggs and vegetables together and top it off with mashed potatos it should resemble a crustless pot pie.

Quiche! Or a frittata!

frittata: saute your favorite veggies (I like onion, bell pepper, and broccoli) until tender, in a deepish oven proof skillet.
Mix some eggs with salt and pepper (like making scrambled eggs). Pour into skillet and let set.
Sprinkle cheese on top and stick it in the oven (350 degrees) until a knife comes out clean.

Eat with salsa, sliced avacado, soy sauce, whatever you like.

Its great!
