Lots of brussels sprouts. parsnips and roast potatoes , broccoli , with christmas pudding and mince pies.

Lentils roulade with chestnut stuffing!!!

200 g raw red lentil (400 g cooked)
3 cloves garlic, chopped
200 g fresh bread crumbs
3 Tbs. water or fresh lemon juice
1 tsp. salt
? tsp. freshly ground black pepper
Stuffing
1 tsp. vegetable oil
2 medium onions, peeled and chopped
1 finely chopped red bell pepper
350 g canned peeled chestnut
200 g fresh bread crumbs
1 handful of chopped fresh sage
1 handful of chopped fresh parsley



In a medium saucepan, combine lentils and 600 ml of water. Bring to a boil. Reduce heat, cover and simmer until lentils are tender and water is absorbed, about 15 minutes.
Stuffing: in a medium skillet, heat oil over medium heat. Add onions and bell pepper and cook, stirring often, until vegetables are soft, about 7 minutes.
Remove from heat.
In food processor, combine onion-pepper mixture, chestnuts, bread crumbs and sage. Pulse on and off until well blended.
Transfer to large bowl and season with salt and pepper.


Preheat oven to 180 degrees C.
Transfer cooked lentils to food processor.
Add garlic, water or lemon juice, bread crumbs, salt and pepper and process until mixture becomes a smooth, pliable dough.
Spread out a large piece parchment paper or wax paper on flat surface.
Transfer lentil mixture to paper and pat into an 28 by 35 cm rectangle.
Spread chestnuts mixture evenly over lentil layer.
Starting with a short end, carefully roll up lentil mixture, using paper to guide you (pull upward on edge of paper to propel the dough forward and create rolling action).
Press roll firmly together with your hands as needed.
Lift roulade onto a lightly greased baking sheet, rub softened margarine over it.
Bake until heated through and top is just beginning to brown, 15-20 minutes.
Transfer to serving platter.

Pumpkin soup or butternut squash soup.

Nut roast is delish! You can buy some lovely mixes in the supermarkets or try making your own. Add a little goats cheese as a sauce to stop it being too dry.

When i make the mix I line the dish with parchment paper that I have spread a little marmite on. It gives it a lovely outer coating.

The mix can be sliced once cooled and then frozen for use later.

Is she a true vegan or a lacto ovo vegan? Lacto Ovos could have dairy products.. If you are really going to accomodate her why not a tofurkey? ( a turkey made out of TOFU?) If shes just not a meat eater, then you could do veggie trays, pies and etc.

my huaband does not eat meat, i just do him the normal trimmings and a few veggie sausages, he is happy with that as he still gets the feel of xams lunch with the roats veg etc. you could do a nice home made veggie pie, a vegetable pasta bake or even a nut loaf, then serve with cheese or parsley sause instead of gravey.
I also do veggie sausaes in veggie bacon which we all have.
This way everyone else still gets the benefit of a traditional xmas lunch and your daughter can still have the roast pots etc.
the trick is to not make too much work for yourself, so try to cook her something which will go with what you are all having and that you can prepare and then freeze her bit before xmas day or prepare it the day before.

get a tofurky. its like a loaf of fake meat, comes with stuffing etc. its really good

just cook her a normal christmas dinner but replace the meat with alternatives like quorn or real eat. you can buy them from supermarkets.

what about a nice nut roast easy to make, for a xmas dinner i am not a veggie but when i made this i also tried a little bit and it was very tasty if you want i would send the recipe to you.

Cook lots of bacon, veggies find bacon hard to resist, that'll get her out of this phase ;)
