What would happen if I totally leave out the sour cream in a vegetarian enchilada casserole recipe?!

Nothing-it will be fine.

Would you post your recipe so I can get a better idea?

Do you not like sour cream? Why do you want to replace it?

extra-soft tufu is a perfectly fine substitute for sour cream in such a dish.

I would not go with rice- or soy milk as this will lend an unwanted taste. As you probably know, tofu is very mild.

It will taste like crap like any other recipe when you start putting in veggie crap for the real stuff.

Sour cream is yummy...a little gross like all dairy, but still yummy. :P
But you would be fine to leave it out. It's only in there because sour cream and mexican food go so well together! Don't add milk.

You can probably leave it out, and it will be fine. What about soy sour cream?
