I am a former chef and a type 2 dibetic along with being a vegetarian, the best advice I can give you for interesting tasting and looking veggie entrees and other food choices, is find out what you like, I eat alot of veg, soya products, grains/legumes and beans, I also eat pasta but not alot of wheat based ones, rice, multi-grain and other grain based.

I also like spicy foods, that is one thing that most vegans and veggies lack, use spices, herbs and flavours to heighten the flavours of your dishes, I also make different ethnic dishes, Indian, Chinese, Japanese and Mexican. This way you do not get bored with your food choices, look for the specials in your local newspaper flyers, I plan my meals and do some thing ahead or make bases for the food with, spices, garlic and other aromatics and flavours.

This way you can come home and prepare a quick healthy meal in a short time, and a slow cooker is essential, I make veggie chilis, currys, seitin/TVP/soya chunks stews, soups with lots of veg and other sauces for pasta's or over rice.
