Cooking vegetarian for my girlfriend?!


Question: My girlfriend is a vegetarian and i'm running out of ideas as to what to make us. Does anyone know of some simple dishes which i can make for us?

If she's not vegan, try Mexican food - you can make any quesadilla, burrito, fajita, etc vegetarian - and delicious. Mix up a marguerita and you're ready to go!

If she is vegitarian and not vegan, try Eggplant Parmigiane (sp?), meatless pizza, veggie shish-kebobs, or tofu stir fry.

The easiest and most delicious is a ratatouille. Have you made it yet? It's very easy: Cut and cube the following vegetables: tomato, onion, zucchini and eggplant. Heat olive oil, throw in vegetables. Simmer w/ salt & pepper and basil for approximately 1/2-1 hour. It's delicious w/ couscous and rice.

I know many - what you need is a good vegetarian cookbook. I recommend one of the following

Laurel's Kitchen - a classic
Any Moosewood Kitchen book. Note that the first ones are harder and more complex recipes.
Vegetarian Cooking for Everyone - fairly recent - this book appeals to meateaters also, so might be an excellent choice for a mixed family.

stir fry with a bunch of different veggies.

Slice one accorn squash in half and rub the whole thing inside and out with olive oil. Place flat side down on a baking sheet and cook in the oven at 350 degrees for 30 minutes. Meanwhile sautee various veggetables together including peppers, onions, zuccini, mushrooms, cabbage, carrots, ect. Whatever you both like. Add in some seitan or garbonza beans and some garlic and basil. Flip the accorn squash and fill with sauteed veggies. Cook for another 15 mintues.

You can also try sauteeing bell peppers, onions, zuccini, garlic, peas, and roma tomatos with some worchershire sauce and season with white pepper, and a hint on salt and cheyenne pepper and ground cummin add in 1/4 cup of soy milk and a dash of marsala cooking wine and sautee for 5 mintues. Grill a whole portobella mushroom in a skillet with worchershire sauce and then pour vegetables over the top and serve.

I cook for a family 4 nights a week. They are vegetarian. I make soups w/ bread some nights... these can be vegetarian or vegan... I have lots of easy casserole recipes. If you are interested email me and I will give you the recipes.

I myself just make traditional meals, but only vegetarian. Like chili, for example, instead of using ground hamburger I'll use bocca crumbles.

Tofu/mushroom melt sandwich

Tofu
olive oil
Mushroom
soy cheese
organic mustard
french bread
tomato
Red Potato Potato Chips

Clean and cut mushrooms. Fry tofu in olive oil and any spices you like in your cupboard (garlic, pepper, turmeric, curry). Saute mushrooms. Add sliced cheese to tofu until melted. Cut french bread, toast in the toaster, spread mustard, cut tomatos. Put tofu on toast and mushrooms on top. Sandwich with chips.

Frozen Nan (garlic or non - Trader Joes)
Daal (Indian food in pkg) or any other Indian food (Trader Joes)
Rice (any kind you like)

GardenBurger Ribblets
Pototoes (boil, broil or microwave)
Frozen Asparagus (saute in margarine and/or soy sauce) or broccoli or enamame
French Bread made into garlic bread
and/or a salad

Garbanzo beans
carrots
celery
white/brown onion
Vegannaise
mustard
French bread

Mash garbanzo beans, add chopped celery, onion and carrots - like making tuna salad. Make a sandwich

Fried tofu with rice or Thai noodles and veggies

Make a salad with from their produce section
