Does anyone know any good vegetarian recipes?!
Answers: i have 2 siblings and we all eat meat and my dad does to exept my mom so i want to cook somehting nice for her. any ideias?

this might sound gross but it is really good you should try it
at the store buy BOCA meat from morning star farms and is vegetarian and make it into tacos
Portobello Mushroom Tortellini
INGREDIENTS
1 pound cheese tortellini
2 large portobello mushrooms
1/4 cup white wine
1 tablespoon chopped fresh parsley
2 cloves garlic, minced
8 ounces Alfredo-style pasta sauce
salt and pepper to taste
1/3 cup grated Parmesan cheese
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or, drain.
Prepare mushrooms by rinsing and thinly slicing the mushroom caps; discard the stems.
In a medium skillet over low heat, combine wine, parsley, garlic and mushrooms; stirring frequently, saute for approximately 5 minutes or until mushrooms are cooked through.
Remove skillet from heat and slowly add Alfredo sauce, stirring to blend; season with salt and pepper to taste.
Separate hot pasta into four portions and spoon sauce over pasta. Garnish with cheese
With the release of the new movie and all, why not roasted ratatouille? You just set it all up beforehand and then make a salad just before dinner. You need:
1 zucchini
3 onions
1 eggplant
2 tomatoes
2 red, green, or yellow bell peppers
6 garlic cloves
1/3 cup olive oil
1 tsp salt
1/2 tsp black pepper
1 cup fresh basil
grated ramano or parmesan cheese
preheat oven to 450 degrees
Cut all veggies into 1 inch thick chunks and place them in a large bowl. (You might want to peel the eggplant). You need between 12 and 14 cups total. Coarsely chop the garlic. Toss the vegetables and garlic with the olive oil, salt, and pepper and spread on a baking sheet. Roast for 15 minutes and then stir vegetables . Stir again another 15 minutes. After 5 more minutes make sure they are fork-tender and juicy.
While the veggies roast chop the basil. When the vegetables are done, put them in a serving bowl and stir in the chopped basil. Pass the grated cheese at the table. Enjoy!
Vegetarian Stuffed Grape Leaves
INGREDIENTS:
1 package soy based meatless ground burger (frozen food section)
1 cup uncooked white rice
1 8 oz can tomato sauce
1/2 teaspoon salt
3/4 teaspoon pepper
1/4 cup fresh parsley, finely chopped
1 jar of grape leaves
PREPARATION:
Remove grape leaves from jar and soak for a few hours in cold water. If not soaked properly, they have a very salty taste.
While grape leaves are soaking, prepare meatless meat according to package directions.All to cool and mix with tomato sauce, rice, parsley, salt, pepper and lemon juice
