Roast brush the outside and inside with oil (I use olive) and season with a little salt and pepper. Roast for about half an hour at 450. (don't forget to roast the lid too!)
Make your favorite stuffing (I like to use one made with stale bread, apples, walnuts and portabello mushrooms), stuff the pumpkin/squash and put it back in the oven to heat up the stuffing and finish softening the flesh of the pumpkin/squash.
This makes a pretty centerpiece on the Thanksgiving table if you serve it on a platter, on a bed of kale, surrounded by small apples, apricots and grapes.
Answers: Serious answer here: I love to make a stuffed large squash or pumpkin. Just cut the top as if you were making a jack-o-lantern, hollow out the squash (turban squash works well) or pumpkin, take out all the seeds (you can save them for roasting later) and other stuff until you are down to just the flesh.

I pour tofu into a turkey mold, and serve it. It really upsets my kids
vegan roast:
1 medium to frail leg of vegan
4 onions
5 cloves of garlic
1/2 c soy sauce
1/2 c worcheshire sauce
2 tbsp pepper
2c white wine
1/2 c olive oil
1/2 c lemon juice and oil
crushed sage, thyme, rosemary and mint leaves
Marinate leg of vegan in this mixture for 2 days, andc throw on the grill. Grill medium rare, just a suggestion of pink, no blood.
*By the way, you can choose lamb, cow, goat...so many vegans to choose from.
