What can I do with fruit fibre after making juice?!

Question: I enjoy using a juicer to make fresh fruit and veg juice, but don't want to waste all the fibre that's left in the plastic bag. Does anyone have any good vegan recipes or ideas for it?

I have made a yummy chinese recipe called birds nest. If it's vegeatable fibre you have left, put them in hand filled patties and fry them. Then dip them in terryaki and soy sauce! They are so yummy! Enjoy!

BUILD A HOLIDAY HOME

muffins, breads, boil in sugar to make jams/marmalade, feed to pets (contrary to pupular blief, many dogs eat fruit and vggies, mine do), tomatoes can be used to make sauce etc etc...

Okay, there are a ton of things you can do besides what has been suggested (the birds nest idea is something I hadn't thought of... I'll hafta try it).

Fruit leather, if you have a dehydrator.
Mix in a bit of the juice or anything else you want for smoothies.
Compost it (just don't put too much in at once and be sure it's relatively dry).
Put it on your face. Seriously. Apple and strawberry puree in particular can be nice for the face.
For those last two, I'd not use citrus fruits, because the worms don't like them so much and your skin can be irritated by them (let's not even touch what it feels like if you get it in your eyes).

make quick breads/cakes/muffins. My mom makes carrot juice all the time and the finely ground carrot pulp is very nice for carrot cake. It's even better than shredded carrots.

Of course you can always put the fiber back in the juice and drink it w/ the juice. I use my veggie fibers in soups/stews for their flavor and their texture. If you live on a farm, chickens and ducks go nuts over both the fruit and veggie pulp. I use some of the pulp in omelets - I know this isn't vegan but you can do the equivalent w/ the vegan substitute for eggs. When I'm making jams/jellies there is always a bit of juice of one kind or another left over. I freeze the leftovers. I save some of the fruit pulp from my juicer in the same manner. Then at season's end I make a mixed fruit jam. As other answerers have suggested, I do use some of the fruit pulp in muffins, cakes, pancakes and waffles. However, the majority of my pulp goes to my vermiculture bin or back into the juice (the pulp helps keep my bride "regular"). We've also saved back a bit of celery, onion and bell pepper pulp for the Thanksgiving dressing.
