Twice-baked potatoes?!
Answers: I'm looking for a really good recipe for twice-baked potatoes, preferably with broccoli and cheese (we aren't meat eaters). Does anyone have one they can share? Thanks!
i found this recipe on allrecipes.com. you can change the serving sizes and it adjusts everything for you, this truely is a great site for recipes, there are a ton of them on here. but anywho, i found one that is really good, but doesnt include broccoli, just add your own.
INGREDIENTS
1 potatoes
1 ounce American cheese, sliced into strips
1/2 teaspoon butter
2 tablespoons and 1-1/4 teaspoons sour cream
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bake potatoes for 1 hour or until soft.
In a microwave safe bowl, combine the cheese and butter. Cook in microwave for 1 1/2 minutes or until melted. Add sour cream and mix together.
Cut potatoes in half, scoop out insides while being careful not to tear the skins. Add to cheese mixture and mix together until smooth.
Stuff potato mixture back into potato shells and bake at 350 degrees F (175 degrees C) for 10 minutes.

on a potato you put seasoning on the skin and bake it then put what ever topping in them and then eat them!!!!!!
Preheat oven to 400 degrees (it can be a toaster oven) wash the potatoes and put vegetable oil on them. Then prick some holes in them with a fork and stick them in the oven for like 45-60 minutes. You know it is done when you can squeeze them and they are kinda mushy. Then you take them out and scoop out the potato. Put it in a bowl and mash it with 2 tablespoons of grated cheddar cheese for each potato (3 potatos 6 tablespoons), 2 tablespoons of milk for each potato, and a pinch of salt and pepper. Then you put the mixture back in the potato skins and sprinkle 1 tablespoon of cheese on each potato. Then you put them back in the oven for like 20 min. at 350 degrees (or until the cheese starts to brown a little) then if you would like you can put brocolli on the top.

Just simply bake your potato, take it out about 10 minutes early, slice open and scoop out the insides. place in a bowl and mix in your goodies spoon back into the potato and put it back in the oven.
I like to mix mine with a little sourcream, chedder cheese, chives and bacon. I do see you mentioned you dont eat meat, so, give your broccoli a little spin in the microwave to get it a little cooked, and mix the broccoli and cheese and perhaps some butter into the taters.
I dont think there is a wrong way to make this, just have fun cooking and eating! :)
This really is almost foolproof! You practically answered your own question with the broccoli and cheese idea. You can also make some cool Tex-Mex versions with some refried beans or mashed black beans, some cumin,cheese, green onions and sour cream. Almost anything lends itself well to this fun dish!! Have fun with it:)
