Vegetarian diet?!


Question: I want to loose weight and besides exercising I wanted to convert to more of a veggie diet..I will still eat meat but mostly fish and chicken...I was wondering if you have any quick easy recipes that are for vegitarians besides just salads...

Well, my fav. book is The American Vegetarian Cookbook by Marylin Diamond. Highly practical.

Certain pastas are great. They have many that you can buy from the store, that come in bags. At many Krogers they have Boca Burgers which are 100% pure veggie proof. They taste like a hamburger, and they are low in calories. They are great!

Use Hummus (chick pea & tahini paste) with all different salad mixes ( such as lettuce, sprouts, cucumber, grated carrot, raisins, sun-dried tomatos) for yummy fast sandwiches - use healthy bread such as multigrain, whole grain, sour dough and pita bread. Add cheese if you like.

You can have falafels (chick pea patties), with hummus and salad - try it in a wrap.

Back to salads - salads can be great if you use your imagination and don't just have the basic boring salads -
you can make a nice rice salad with brown rice, grated carrot, raisins and pine nuts, have this with a bean salad and a green salad.

Add fetta / boncoccini / sundried tomatoes / nuts / dried fruit (eg. figs , raisins and currants) / avacado/ asparagus / herbs to any salad to make it more interesting.

Stir fries: if you feel like cooking a little just chop up your favourite veges, lightly stir fry with garlic, chilli and basil, add tofu & or nuts (such as cashews or almonds) - add a little soy if you like (I use tamari - wheat free soy).

Have stir fries with or withou rice / noodles. Best to use brown rice, and buckwheat noodles are nice.

Gee...any recipe that contains ingredients besides meat-then you just leave the meat out!
In other words-pasta primavera WITHOUT shrimp or chicken, chile con carne WITHOUT the carne, vegetable NONBEEF soup, enchiladas MINUS chicken, get the idea?

Mushroom dishes are great.
Or how about pizza with mushrooms ...and cheese and olives...??

Why is this in the vegetarian section?

Fish and chicken are meat.
