Can any vegan tell me exactly what they ate today, or on a typical day?!

Question: Per your own discretion, do you find your meal nutritionally adequate and balanced? How does it check with the RDA for certain key vitamins and minerals and protein?

Thanks in advance for your time and contribution.

Sure, this is what I ate today:

Breakfast:

Meusli, shredded wheat, raisins, dried apricot, flaxeed powder, soy milk, banana, apple juice.

Lunch:

Hummus, Tomato, cucumber, lettuce and alfalfa sprouts sandwich with wholemeal bread. soy milk.

Snack:

Granola bar, apple

Dinner:

Wholemeal pasta with courgette, spinach and mushrooms in a creamy tofu sauce. Salad with seeds. Mushroom, cashew and pine nut croquettes.

Snack:

Banana, Dried Figs and think I may go and have a couple biscuits.

I think I've had a pretty healthy day. Will have a different day tomorrow so will get more veggies like carrots and brocolli which I didn't eat today.

By the way vegans can get all their vitamins from fruit and veg... seeing as we eat more of these than meat eaters in most cases chances are, we're getting more than them. As for protein... it's almost impossible to develop a protein deficiency because most foods have it. Wholemeal breads and pasta, nuts seeds and tofu are great sources. In fact tofu has more absorbable protein in than meat! I just read your answer that you think all vegans are nuts and feel quite offended by it. Tell me how am I nuts and how does my diet look unhealthy to you?

EDIT:

Flaxeed has plenty of omega 3 and fatty acids in... just one tablespoon a day is needed which is exactly the amount I had. Nuts and seeds also have plenty of fat in but unlike meat, they're not made up of 'saturated' fat. Oh and I did fry my croquettes in olive oil... another good source of fat. Anything else I'm deficient in?

I usualy eat
Breakfast
-peace of toast with a lot penut butter on it.
-cup of soy milk
-frozen berries

-dinner
usually have salad with veggie burgers, spaghetti, curry, or just chopped veggies on toast.

-after dinner
usually have muesli with dried fruit and seeds.

thats a pretty typical day, i cycle quite far most days though. without the cycling i would eat less at breakfast and lunch.
