For everything to live something else must die. This is the law of the natural world.
Your friend is killing plants to survive. Plants respirate and grow so they must be alive. They may not have brain stems but they are still living things.

Tell your friend to get in touch with nature. Idealism is an impossible path and creates it's own suffering.

yeast is not an animal. Although there was much debate in the 1960's and 1970's about what yeast was ( very recent in biological research terms ) its now generally accepted that yeast is definately not part of the animal kingdom and is a fungi.

I take it your vegan friend consumes no alcohol.

It may be because there are sometimes other ingredients such as milk, eggs or lard in bread which comes from animals.

She doesn't eat bread because it contains eggs. Almost every bread contains eggs. Active dry yeast - its because it grows and feeds off of sugar - there is no difference, her logic is flawed.

Whats the big deal about what we are eating? If you are healthy and concerned with your health you will listen to your body and what you need to eat. I never eat red meat. Does that put a name on me.
I think a lot of people just want to be classified and brand names pasted on their brows. If you watch a child eat, they will show you what they like and can tolerate.
I have 4 children and they all eat different.
Some eat meat and some just eat eggs and beans like myself. That doesn't mean I am a vegan or veggie or meat eater. We eat what our systems tell us to eat, and mine tells me not to eat red meat. Yeast in foods are in many, not just breads and when you cook them and process them they turn into bullets again depending on the form. If this home work for YOU?

If she's vegan because of animal rights issues, does she ever wash her bedsheets? because washing your bedsheets kills thousands, if not millions, of microscopic dust mites. Oh, the horror.

Could it be possible that she doesn't eat bread only because of the yeast, not because of her being vegan? Why I say this, is because some people (myself included) try to restrict how much yeast they ingest to avoid excess yeast in their bodies, to avoid yeast infections!! There are ways to try to combat an over amount of yeast, like by taking pro-biotics to keep yeast at bay. If you want more info, look up the word "candidiasis." And one vegan cookbook I own does have a bread recipe section that contains absolutely no yeast for just the reason of those who wish to avoid it!

Some breads contain milk and butter products. But yeast is a fungus, not an animal or animal product. Maybe she does not like bread?
