Starting with fecal samples from Australopithecus (3 million years ago) scientists estimate that much of their protein came from raw nuts, vegetables, raw grains, etc. Very few primitive human-ape ancestors seem to have eaten meat, and none appear to have made it a staple of their diets. Starting with the more recent "cavemen", it seems they resorted to meat due to climate change in the ice age, probably only very resilient plants survived and to prevent starvation, they ate meat. Humans don't need meat to survive, and seitan and tofu are just a modern convenience, they're quick and easy and convenient.
