I adore soup, so I eat a lot of it. I make chili by sauteeing peppers, onions, garlic, and shallots in olive oil, then throw in a few cans of drained beans and some chopped tomatoes (undrained).
Also, try this: in a soup pot, heat a couple tablespoons of olive oil and crush garlic to taste into the bottom of the pot. Swish it around until it gets soft (don't brown it, though, unless you want to). Toss in some chopped fresh spinach, stir it around until it's all wilted. Pour in one large can of diced stewed tomatoes and refill the can with veggie broth (hot water and a boullion cute or two is fine). Bring to a boil. Add a packet of your favorite fresh ravioli and cook until the ravioli is done. Add more broth if you need more juice. (If you want to, you can cook and drain the ravioli seperately while you're working on the garlic and spinach.) Salt, pepper, any other seasonings you might desire. Great in a bread bowl, delicious on its own. Yum. Yum. You're done.

It is layers of pasta, sauce with vegetables, cheese mixture with spinach, and mozzarella. Sprinkle with Parmesan and/or Romano.
My sauce is olive oil, basil, garlic, onion, peppers, mushrooms, and tomatoes.
My cheese mixture is ricotta cheese, low fat cottage cheese, an egg, and spinach (defrosted).
Try some carrots.
Lentil soup(progresso makes a great one) w/ bow tie pasta and garden salad. Yummy. You'll get two meals out of the soup if it's just you.
