Does anybody know any good light vegan recipies?!
at the moment im getting over anorexia
ive been considering about veganism for a LONG time but i just couldnt give up my cheese and yogurt!
now ive come to the conclusion if i can totally give up food, i can give up my cheese and yogurt :-) no prob.
im going to begin the process of retraining my body to take in food tomorrow
im going to start off with things like applesauce and tomato soup
but i need some recipies for later on when i actually start eating solid foods again
and im definately NOT looking for dessert recipies! my doctors have told me as long as i remain my current weight they won't hospitolize me. i do NOT need to gain weight!
i want light, simple recipies please and tips on what to buy in stores like:
are there any brands of spagetti that arent made with egg whites?
what brand of soy milk is best?
is there a brand of bread i can buy in my local grocery that's totally vegan?
etc., etc., etc.
so PLEASE help! i really need your help!

First of all, congrats on taking on veganism. It is a hard thing to take on in this culture of fast food and convienence. You will have to educate yourself on this subject (and even Nutritionists/Dieticians are not up to date on some of the findings they are just now bringing to light on eating a plant-based diet from the scientific community).
If you are going to be vegan, you will need to have to eat vegetables and fruits, grains and nuts, and no processed food. You will have to learn how to make your own food most likely. There are some vegan processed burgers and things like tater tots that are vegan, but those should be kept to a minimum.
Tomato and applesauce are great, but you will need to eat a variety of food. You have only one fruit and one red vegetable (which by the way a tomato is a nightshade vegetable and those are hard on the digestion - see what I mean you will have to learn alot). To clean the palate and keep digestion easy, I would advice leafy green vegetables and rice (brown of course as white is basically all starch and all the nutrients removed). Steamed kale/collard greens/spinach with brown rice would be my choice of starting to detox my body and get my tastebuds ready for simple clean plant based cuisine.
You will find out that casein in dairy is an addictive food additive they add to dairy. It took me months to get over dairy, and I still have a craving for gooey cheese.
Your request for pasta without egg whites, is just to look at the labels. Most pasta is without egg whites/eggs. Soy milk is up to you on taste and what you want to have as the extras they add (I prefer only soybean milk with brown rice syrup for sweetening and no added vitamin/minerals added (no synthetic stuff in it) and I like it plain). Sprouted grain bread is the easiest to digest and the most nutritious for you (Alvarado Organic sprouted multigrain bread is my favorite, and Eziekel's sprouted bread is second best). Vegan foods are just all the vegetable side dishes, fruit, pasta, rice dishes, and all the different grains dishes (quinoa, couscous, amaranth, millet, and even oatmeal). Legumes are your best source of the complete protein your body will need (And whole grains, seaweeds, blue-green algae, and remember that tofu is soybean curd).
Please start to read up on Veganism and be smart about what you eat. Make sure the food you eat is for your body and not your taste buds! Empty refined carbohydrates taste yummy, but do nothing for your body. Research on the Internet for ideas and how to support your health.

It would be irresponsible for anybody here to suggest anything as you have a medical condition that requuires medical supervision. You would be better off consulting a real dietician or nutritionist AND a physician than the fanatics here on YA.
First... get medical advice on this...! This doesn't sound good. Second, and after consulting and getting permission from your doctor, you can look up light and balanced recipes. Best of luck...
If you go to natural food stores like Davids or Roots or even Trader Joe's they have a lot I mean a lot of vegan stuff. You can find gluten free, egg free, and other "free" stuff.
since you have issues with food. you should not tease yourself with any foods in the beginning that remind you of the foods that you have stayed away from for so long because these foods remind you of fat and obviously the way you think they were going to change your weight and then that would then change the way you look, then that has a effect on the way you see yourself.
Start with foods like fruit, raw veggies, nuts and grains. Eat them unaltered to get yourself used to eating again, not go out and make some vegan spagetti and probably start thinking about what it might do in terms of making you gain weight. Because if you are anorexic you will be making foods and looking at every ingredient that goes into that dish as if it were evil, if you are anorexic you should start out with natural raw foods that are unaltered like all recipes are, with butter and salts or cooked fruits and dried fruits. You will not be getting the sugar from the fruit the way you need to right now You need to get used to eating wholefoods raw without sugar or sucanat or maple syrup or butter or margarine or flour or any of these things that will tempt you and possibly make you sit back and think about what you just ate you need to feel guilt free to overcome or if anything not fall off the wagon and feel comfortable. Once you have gotten use to whole organic fruits and veggies and Raw nuts and breads like ezekiel breads and get raw nuts not roasted lget nuts like cashews and put them in a processor and make your own cashew butter for bread at whole foods, then the next step is the learn how to eat these things without such thought on portion sizes and calories these are natural foods and can, no matter what anyone or some dumb nutritionist says about fruit sugar and potatoes can be eaten in any amount until you are satisfied not overstuffed, too much of anything is no good, so once you learn how to satisfy yourself without feeling afraid of the food then you can start doing things differently like now try steaming the broccoli or string beans a little not to much, you do not want a drastic change in your food right now. Then after 2 weeks of raw, steamed and nuts and ezekiel. you might want to add tofu steamed or not and extra virgin olive oil. Well there is so much more but start with naturally curing yourself completely of your food demons. Dont get me wrong you have a right to watch what you eat, but anorexia is like alchoholism and being a drug addict it is a road you watch everyday, you do not want to fall off the wagon. Sorry about my spelling. Not really thinking about that now, just writing. a good book to pick up that is a very informative nutritional book that you can make your own judgement on is fit for life, by dr mandell. I read this book 7 years ago and its great. Remember most of it like it was yesterday. Hope all is well.
