Tasty vegetarian food? Anybody got any good ideas?!

Question: I'm 15 and I've been a vegetarian for 2 or three years, I'm starting to get a bit bored of eating the same stuff a lot of the time. Are there any quick, easy vegetarian foods that are really tasty? I've tried cookbooks and stuff but they're always too complicated and have too many ingredients that I end up using once and throwing away. I need stuff i can make with really common ingrediants I would find in my kitchen. (snack and full meal ideas welcome)

when i was a vegetarian in high school, i was really bad at it and it didn't stick . . . i continued eating junk food as long as it didn't have meat in it and just eating whatever my mom cooked without the meat, so it wasn't too healthy or a complete meal. after i got out on my own, i started actually eating a lot of vegetables (i know it sounds like a no-brainer, though it actually isn't always) and making sure i have 2 or 3 servings for my big meals . . . and doing this made all the difference in how i feel and how i feel about being a vegetarian which i think is really fun if you're in charge of your own food and its taste and variety. here are some things you can easily add more veggies to to get you more excited about experimenting with food :

make your own pizzas with lots of fresh vegetables and pesto and sauce as toppings

stir frys with tofu or beans

vegetarian sandwiches with avocado, sprouts, cheddar cheese and tomato

making your own hummus is fun and can be done a million ways

Anything can be made vegetarian.

Snack-make some popcorn, spray some Bragg's liquid amino's on it, and mix it with nutritional yeast and a touch of cayenne. Yummy.

Meal-Spaghetti with red sauce. Buy some Gimme-lean faux sausage and roll into balls. Saute with some olive oil and serve with your spaghetti. Of course and variation of pasta and sauce would also work.

Make a "BLT" on an English muffin. Tomato-Romaine lettuce-fake bacon. Delish.

Tofurkey for the holiday is a must. Quorn also makes a turkey option.

Buy some quorn naked "chicken" cutlets. Bake or saute and serve with anything under the sun. Or cut into pieces and make a "chix" salad with your favorite ingredients.

Really don't like cooking? Broil a slice of cheese on a piece of bread (or nuke it for 20 seconds). Instant cheesy bread.

Last one- Nachos with black, pinto, kidney, northern, red beans (whatever kind you like) with cheese, scallions, salsa, sour cream....super yum.

Hope these ideas help.
