Baked Stuffed Pumpkin- Sweet
INGREDIENTS
? 1 medium sugar pumpkin
? 6 Granny Smith apples - peeled, cored and chopped
? 1 cup chopped walnuts
? 1 (16 ounce) can whole berry cranberry sauce
? 1 (20 ounce) can pineapple chunks, drained
? 3/4 cup packed brown sugar
? 1/2 cup golden raisins
? 1/2 cup dark rum (optional)
? 2 teaspoons minced fresh ginger root
? 1 tablespoon freshly grated nutmeg
? 1 tablespoon ground cinnamon
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Position rack in the center of the oven.
2. Cut out top of pumpkin, and set aside. Scoop out seeds with a metal spoon.
3. In a large bowl, stir together the apples, walnuts, cranberry sauce, pineapple, brown sugar, raisins, and rum. Season with ginger, nutmeg, and cinnamon, and mix well. Spoon the mixture into the cleaned pumpkin, and replace top.
4. Set pumpkin directly on a baking stone or a thick baking sheet. Bake for 1 hour in the preheated oven, or until pumpkin begins to soften. Remove from heat, and stir, scraping the sides gently, so that some pieces of pumpkin fall into the apple mixture.
Spanikopita (Greek Spinach Pie). From this recipe, I would use frozen spinach that has been thawed and lightly pan dried on low heat to get rid of as much water as possible. Secondly, I don't make mine with leeks (but it could be good).
For a side dish:
Curried Roasted Sweet Potatoes
Peel 4 large sweet potatoes/cut into chunk 6 pieces per sweet potato should be fine
Place cut potatoes in a bowl and sprinkle on good amount of curry powder... shouls almost be fully covered then
Drizzle with olive oil and Put on a sheet pan in a 350 degree oven for 30 minutes or until a sharp point on a knife will slide through without much resistance.
Before serving place potatoes In a sauce pan with half can of vegtable stock and half can of coconut milk. Let those cook on medium heat for 10 minutes and serve.
Scoop potatoes out and put them in a bowl with a little of the stock/coconut mixtiure
