Veggie Xmas lunch, what do you think?!


Question: First off, they are vegetarian, NOT vegan, and have no allergies


For starters I'm doing a fresh Mozzarella, tomato and basil salad, sprinkled with best olive oil and balsamic vinegar dressing

I thought I'd do my now famous stuffed Portabello mushrooms, with a herby, garlicky stuffing with pine nuts and perhaps add some smoked tofu into the mix, served with mini baby roasties and red cabbage with sherry and sultanas (this side dish has been requested)

For Pud, everybody hates trad Xmas puds here SO,

Biscuit base, boil a tin of condensed milk until caramel and pour over biscuits, top with thickly sliced bananas, then here's the twist,on a regular banoffee pie, instead of just cream i make a light banana mousse with a splash of creme de banane liqueur, and whipped cream.

Coffee and hand made chocolates
Port, Brandy or Liqueurs

Sounds better than the quorn roast i will be sitting down to. In fact I may throw it away and duplicate to the best of my ability the above.

Can I come to yours for Xmas lunch, being a vegetarian myself, what you have planned is excellent. My mouth is watering, your guest will love you forever.

It sounds interesting. If I were a vegetarian, I'd be happy that someone spent so much time and effort thinking of and preparing something different for me, especially your not being a vegetarian yourself.

Being new to Yahoo! Groups, I was amazed to be told you had posted, Merciasound! Slightly big-brotherish, or what?

Anyway, I am glad to give you my 1p worth because I am in the same predicament only a little worse! I need to serve several meals over Christmas/New Year for a vegetarian AND carnivore family in a foreign country (Germany) with one ready-to-pop pregnant mum, two infants ages 4 and 2, dad, gramps, little sister and anyone else who decides to call round...! Anyway, your menu has started me thinking about details...!

On the whole your choice is sound, although my family would probably require more filling and hearty choices... And I am not called Piglet for nothing! LOL! Red cabbage is a traditional Christmas vegetable (usually served with goose) in Germany, but served with dumplings (bread or potato). I think your combination is excellent, although had you thought of adding chestnuts rather than tofu to the mushroom stuffing? I traditional touch, perhaps? I understand the smoky element as an added flavour... I am looking forward to using the smoked butter I recently sourced in Anglesey for that add nuance in odd dishes where smoked meat is taboo.

I am afraid banoffee would be out, because I personally love toffee and bananas but I do not like them together in this rather sickly-sweet combination, where I find the flavour tastes alarmingly artificial. I would much prefer an orange or lemon based pudding to round off a festive meal. Maybe include a mulled-wine with mixed red fruit jelly served with festive short bread shapes as an alternative. Trifle made with my home-made damson jam is a perennial favourite here too, so plenty of alternatives to a heavy Christmas pudding... That is usually served as a complete meal some time over the festival. A day when we have been out walking and have a hearty appetite.

Oh dear, this is not at all what you want to hear and I think you have started me off on "planning"! This will mean lists reproducing all over the house from now until whenever Christmas is over... Usually well into January! LOL! Let us all know how it went after Christmas! Cheers!

That sounds delicious - set a place for us (me ,hubby and my little 'mini me'!!!) We will bring the wine, the innocent smoothies, the luxury crackers and our washing up gloves!!

You're the vegetarian. Do what you think is best.

So sad now I know why I`m not a vegetarian,variety is the spice of life.
