I just went vegetarian and i need help on what i can eat to still be healthy......?!


Question: I know that you can eat beans to get proteins but i'm not really all to for sure on a healthy diet plan to make sure that i get all of the nutrients that i need..If anyone can please help me out or give me any ideals on meal plans then that would be greatly appreciated..thank you...

First of all since you just became a vegetarian take it slowly.
If you stop eating everything at once you'll get discouraged and it becomes difficult.
First cut out red meat, then poulty, then fish (not necessarily in that order) cut them out each month though.

For foods you can eat:
veggie burgers
beans
lots of fruits and vegetables
nuts (in small portions to avoid too many fats)
soups
egg dishes
creative pastas

I make lasanga with whole wheat pasta, spinach, marinara sauce, and soy cheese.

You can go on food network and find vegetarian recipes there or epicurious.com and allrecipes.com

first of all...as you obviously already know, NO MEAT!!! if i were you i would take the carrots ad salad road. keeps you in good shape and will keep you living a couple extra years too!

With a little research you'll find that it is quite easy to get everything you need, don't despair! Try to eat a variety of food, including but not limited to, leafy green vegetables (kale, spinach, etc.), whole grains (not white bread!), nuts, fruits, beans/legumes and you won't have anything to worry about. Throw in something fortified with B12, such as Silk Soy Milk and you should have all your bases covered.

If you can move towards being vegan in such a way that still lets you enjoy food, you'll have no problem making the transition. In the end, you will find a whole new satisfaction in eating that was never there before.

well you might have cravings for meat. try meat substitues such as boca burgers and chick'n. They also have breakfast food. Ive never tried it but it looks really good.

Best thing I can tell you from a view pt of getting the right nutrients is consulting with your Family Dr. or Dietitian. What works well for others may not do the same for you. Even if you are healthy, still, seeing a Dr or Dietitian wouldn't hurt. In fact, I highly suggest it.

Fruits, grains, nuts, seeds, beans, sprouts, cereals, herbs, and veggies. Vegetarians can also eat eggs, dairy products except for cheese!
Vegans don't eat dairy products. Iron is more important than protein. You can get iron from beets. What is most important you need digestive enzymes and that is in fruit! ( meat eaters get that second hand by their meat eating as it's in meat.. cows eat grass, clover or hay. )

Go for Green Vegetables

One *small* item that you shouldn't forget:

PLEASE supplement with flax oil. I've been vegan for almost a year now, and I've just recently found out that my lack of EFA supplementation has caused a bit of a nutritional/health problem. Okay, it's fixable. But start out right...and include flax in your diet.

buy BOCA brand soy taco meat and soy veggie burgers, they have few calories and TONS of protein!!! Much more protein than beans! Check the frozen section of like every grocery store.

you could go with eating veggies a ton.. or you could just give in to some chicken here and there. or you could make some chili without meat.
Here is a great soup that you might enjoy!

1 lb sweet patatoes
1 tbsp canola oil
2 cloves garlic chopped
8 1/2 tsp red pepper flakes
1 1/2 tsp of salt
4 1/2 tsp freshly ground black pepper
4 cups sliced bok choy
1 cup bean sprouts
1 cup edamame, shelled
12 wanton wrappers
3 tbsp white miso, plus more to taste
2 scallions, thinly sliced

Heat oven to 375. Prick holes in patatoes. Bake on a baking sheet until soft, turning once, about 1 hour. Cool, then peel and mash. Heat oil in a small skillet over medium heat. Cook garlic and shallot, stirring, until fragment, 1 to 2 minutes. Add pepper flakes. Stir garlic mixture, salt and pepper into patatoes. Place bok choy, sprouts, and edamame in a pot with 2 cups of water set aside. Lay 1 wanton wrapper in the palm of hand. Drop a heating tbsp of of patatoe mixture in the center make a fist to gather edges. Repeat with remaining wrappers and filling. Set dumplings on top of veggies in pot, Bring to a boil. Cook, covered, until wrappers are translucent, 3 to 6 minutes. Divide veggies and dumplings among 4 bowls. Add 4 cups of water to pot. Bring to a boil. Remove from heat. Add miso, until it dissolves. Divide among bowls; top with scallions.

And thats it!... its really good! I hope you like it!

WOW ..."went vegetarian" without knowing what to eat. Yep, you have the brains of a vegetarian all right. That's like skydiving and asking where you can buy a parachute on the way down. Stupid emo-airhead.
