I love salads of all kinds. Mmm. Fresh veggies, beans, sometimes fruit (sweet and savory). Cold salads, warm salads.
i love salad - always have, even as a little kid. only problem is that i have developed IBS (long story), so now i have to be careful about how much of it i eat, as salad stuff tends to be pretty hard to digest.

I love them! I almost always add green onion and diced red pepper. I like adding sprouts, too, but not too many. Oh, and I love adding some pecans or walnuts on top. The company that makes Terra Chips makes the mixed root veggies in tiny little crispy strands that are really good sprinkled on top. If I'm serving an entree salad I like Trader joe's spicy sweet pecans sprinkled on top. I love goddess dressing the best. Annie's is my fave, but Trader Joe's brand is good, too. I need to learn how to make my own. I like spinach salads quite a bit. Just spinach, some onion, and some goddess dressing...so good! Oh, and how could I forget the tomatoes! Always tomatoes on every salad. I like the Japanese tomatoes. I usually like cut tomatoes instead of whole cherry tomatoes. have you seen those ones where they have the mix of little yellow and orange and red tomatoes? Those are pretty yum and they look so pretty scattered in my salad bowl. I have a pretty good variety of salads I serve regularly. Chinese salad with a bit of cabbage and shredded carrots thrown in, tossed with Trader Joe's spicy peanut vinaigrette and sprinkled with chopped peanuts on top...mmm. If you want to really go crazy they make salad toppings that are little fried wontons or you can make your own crispy won ton topping - it's pretty easy to just cutpackaged won ton wrappers and fry them up. I serve that a lot with fried rice on the side. My favorite salad, though, is the kitchen sink salad. That's where you throw in everything but the kitchen sink! Chopped zucchini, grated carrots, peas, sprouts, tomatoes, onions, radishes, spinach, lettuce, red and green peppers, whatever other kind of squash you've got (I usually grate it), and anything else you can think of. Dump some dressing on top and viola! A bowl full of good nutrition.

CURRIED CHICKEN SALAD
2-3 boneless chicken breasts, skin removed
2 stalks celery, strings removed
1/4 cup fresh cilantro, chopped
1 cup real mayonnaise (not salad dressing)
1/2 medium onion, finely minced
1 teaspoon curry powder
2 cloves garlic, minced
lettuce leaves, for serving
paprika (optional)
Simmer the chicken in water (or chicken broth if you have it - then reserve for making soup later on. Do not allow the water or broth to boil.
Meanwhile, remove the strings from the celery and dice it into 1/3 inch dice. Wash and chop the cilantro. Peel and dice or mince the onion and garlic.
Stir the curry powder, onion, and garlic into the mayonnaise, mixing well.
Remove the chicken from the pan using a slotted spoon. Dice into bite sized chunks. Add to the mayonnaise. Mix well.
Arrange a few perfect lettuce leaves in the center of a salad dish. Scoop the chicken mixture onto the center. Garnish with a sprinkle of paprika (we like to use either the Hungarian or smoked paprika) and top with a sprig of cilantro.
Serves 3 or 4.
