Vegetarian Tday Recipe to Bring to Family Gathering??!


Question: Does anyone have a good recipe for thanksgiving that is vegetarian or vegan that would be welcome in a "traditional" family gathering?

My family likes to play a lot of jokes on me....so im not really sure what i should bring that won't be shunned for being vegetarian or vegan...

Well, my first thought is a nice potato dish - everyone loves those, and there's a ton to choose from. Mashed, au gratin, scalloped, sweet potatoes....but if you want to do a vegetable, what about just a nice pan of roasted root veggies with olive oil and garlic? Or you could do an asparagus casserole - those are to die for. Or how about a butternut squash soup? (a personal fave of mine)

2 Tbsp canola oil
1 Cup chopped onion
2 Cloves garlic, chopped
3/4 Cup thinly cut carrots
1/2 tsp ground cumin
1/2 tsp salt
1/2 tsp freshly ground black pepper
4 Cups butternut squash, cut into 1 inch chunks
1Tbsp minced jalapeno
31/2 Cups veggie broth
1/2 Cup half and half


In a large pot, over medium heat, add canola oil, onions and garlic. Saute until softened and just starting to brown, about 5 minutes. Add carrots, cumin, salt and pepper and cook another 3 minutes. Add the squash, stock and jalapeno, and bring to a boil.
Reduce heat if necessary, and allow to simmer for about 30 minutes, or until squash is softened.
If you are lucky enough to have an immersion blender...blend in pan until smooth and creamy. If however, you are like me, you will need to scoop it into a blender (or food processor) and puree it.
Return to the pot and add half and half, stirring to blend well.

Stuffed acorn squash, or Winter Squash Risotto is a good choice.

Here is my recipe for Blue Cheese Sweet Potatoes. We love these

Blue Cheese Sweet Potatoes

4 medium sweet potatoes
? cup Gorgonzola Cheese( you can use other blue cheese, gorgonzola is creamier)
1 ? Tbsp Butter
1 tsp chopped green onions (green part only) or use chives
salt and Pepper

Preheat Oven to 375°

Bake sweet potatoes or yams until they are fork tender, about 45 minutes to an hour) You can also microwave them if you are in a hurry. I try to do them in the oven for the extra roasted flavor.

Once potatoes are done and cooled down enough to handle, remove all the flesh and discard the skin. Add the rest of the ingredients and mash together. You don’t want it to be smooth. This is rustic. Place in casserole dish.

Almost any vegetable dish would be welcome at a Thanksgiving feast. Mushroom Risotto is a last minute dish so there proably won't be room on the stove top . How about a pasta salad with artichoke hearts, red bell pepper and green onions with a lemony italian salad dressing. Parmesan cheese on the side for vegans. I made a red cabbage relish/slaw that used thinly slice red cabbage. The dressing was made from red raspberry jam, apple cider vinegar some fresh grated apples salt pepper and cloves. I cooked the cloves in sugar and water strained them out and added the sugar to the dressing so no one would lose a filling from their teeth or you could use powdered cloves. This can be done the night before and served cool or room temperature. It is a sweet- n-sour side dish kinda the role the cranberries play. People that generally didn't like cabbage enjoyed it since the salt and vinegar kinda "cooks" the cabbage so it is tender.

Pasta with pesto, sun-dried tomatoes and fetta

or pasta with pine nuts, rocket, sun-dried tomatoes and fetta.

I would use organic wholemeal or buckwheat pasta, but if your family are too conservative just use white pasta for the day.
