Do you have a yummy recipe for a chocolate vegan cake?!

vegan choc cake
Ingredients:

3oz soya margarine
7oz sugar
2oz firm tofu
soya milk to blend
4oz self-raising flour
2tsp baking powder
2oz cocoa powder
Method:

Cream together the margarine and sugar. Blend together the tofu and a little soya milk (this is the binding agent, replacing two standard eggs in the original recipe); add this to the marge and sugar. Mix in the remaining ingredients, and pour into a greased baking tin.

Bake in a preheated oven at 190C, 375F, or gas mark 5, for 1 hour. Cover loosely with foil half-way through cooking to prevent burning.

Mocha Chocolate Cake

Cake
8 oz (225g) self raising wholemeal flour
6 level dssp cocoa powder
1 level tsp bicarbonate of soda
1 level tsp cream of tartar
2 tbsp soya flour
7 oz (200g) caster sugar
9 fl oz (250 ml) water

Filling
2 oz (55g) vegan margarine
4 oz (55g) icing sugar
1 tsp coffee essence or v. strong coffee
few drops of vanilla essence


Topping
1 bar vegan chocolate
1-2 tbsp boiling water
chocolate covered coffee beans - optional


1. Preheat oven to 200oC/400oF/Gas 6.
2. Sift flour into a basin with the cocoa powder, bicarbonate of soda and cream of tartar. Add soya flour and sugar, and then mix together. Stir in the water.
3. Turn evenly into 2 greased 7" sandwich tins. Bake in the pre-heated oven for about 25 minutes. Leave in the tins until cool before turning out.
4. Make the filling: cream the margarine with half the sugar, then add remainder and cream again. Stir in coffee essence or strong coffee gradually to required consistency. When smooth add a few drops of vanilla essence.
5. Make the topping: melt the chocolate in a double saucepan and add boiling water. The more water added the softer the topping.
6. Spread on top of cake and leave to set. If desired decorate with chocolate covered coffee beans.

I would just make it with a normal recipe and use egg subsitute. And margarine.

This is a really simple, yet very tasty cake. You can use rice flour or something other than wheat. You can also add chocolate chips and, or nuts.

Original recipe yield: 1 - 9x5 inch loaf pan

INGREDIENTS
1 1/2 cups all-purpose flour
1 cup white sugar
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
1 cup water

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.
Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.
Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.

Not one in particular but at Passover Jewish families often make a flourless chocolate cake that is just awesome -it is also pareve(contains no meat or dairy, though it may contain honey and some other things that may not be vegan -oh and I think eggs are pareve but there are egg substitutes?). I know it uses ground almonds or hazelnuts instead of flour.

And I can only find my little Jewish cookbook and its not in there, and I can't find it online.

Anyway I don't know if that helps at all! But it sure is yummy =))
