Vegetarian Thanksgiving....?!


Question: so my cousin is coming over for Thanksgiving and she just informed me that she is a vegetarian, while that's great, I'm not sure what to serve her so that I feel she's getting the whole Thanksgiving meal experience, I'm preparing Macaroni Salad, and Potato Salad, Candied Yams, Greens, Green Beans {that both will be seasoned with meat}; and dinner rolls and Mashed Potatoes w/gravy of course I'm serving meats as well, but as for veggies that's all I'm having do you think that's enough....?

No, I'm afraid it won't be enough. Your cousin can't eat anything that's been seasoned with meat, and she can't have the gravy if it's been made with drippings. The rest of the dishes you've mentioned are very low on protein, and she can't eat the vegetables you're providing.

Why not throw together a Three Sisters Stew? This traditional native American dish combines the "three sisters" of corn, beans and squash to create a complete meal in itself. It's not that hard to make and can be made in the crock pot or stew pot with any winter squash you prefer. And the great thing is, it's healthy and everyone will love it. That sounds like plenty, especially since this is new information for you.
It would be nice of you if you pulled aside some of the greens and green beans before adding the meat. It's easy to do, and then she can have hot food for Thanksgiving, instead of just the cold salads.
