I am a former chef and a vegetarian, and they cook up like any dried bean, and the canned variety are good for soups, stews, chilis and as a ingredient in Mexican and Indian food prep.

For the dried one's, I soak them overnight in a large bowl and them cook them the next day in lots of water, no salt as the skins get tough, but seasonings like chili powder, an Mexican spices like cumin, epazote and mexican oregano. mash and cooked for tacos, burritos and other mexican dishs, and not full of fat as they can be made tasty with just spices and flavourings.

My secret is to soak them overnight in saltwater, drain, rinse and cook in the crockpot with marjoram. It helps to soften the beans. I love making beans soups with every kind of veggie I can fit in and pintos are what I usually use.

Where's the other picture? If these are the canned ones, drain them and dump some in your salad. They're great that way. I grew these things in my garden once. I love them!
