Anyone have any good recipes with vanilla vodka?!

Question: I bought a bottle to try it and though it's tasty, I don't drink a lot of soda--the only thing I know to make with it is vanilla vodka and pepsi. Anyone have anything else to try? I can't do dairy, so things like cream and ice cream are out. I really want to finish this bottle...help!
