Why does lemonade curdle my Pina Colada?!


Question: Last week I poured myself a Pina Colada (rum, cream, pineapple and coconut milk) with lots of ice. Delicious.
The next one I made with lemonade and it turned to something resembling scrambled egg. What happened?

The acid in the lemon reacts with the cream and makes curds.
Don't waste your rum!

lemon will curdle dairy products. It's the cream and lemon that's doing it. If you want to test that theory, take a small glass of milk and put in a tablespoon of lemon juice and let it sit for a short while.

try orange juice if you dont have pineapple. it doesnt have as much acid as lemon and shouldnt curdle the cream.

I think it was The Noid. He's always trying to steal my pizza... He must be messing with your drink.
