All the major supermarkets now sell goose fat. There is nothing better for roast potatoes. Par boil them for 10 minutes, drain them and shake them vigorously in the pan to fluff up the edges. This makes the wonderful crunchy edges. Now tip them into the hot goose fat, add salt and roast for 30-35 minutes until golden brown.
For best roasties, you need King Edward or Desiree potatoes.
I am having a goose this Christmas. Loads of lovely fat that keeps for months in the fridge.

Any good butchers, my local one sells it.....

Any good butchers sell it now days. We're a butchers in Ireland and we started selling it about 3 years ago.

In your local market, your local butchers...
And why not buying a goose, coking it and just collect the fat?

all uk supermarkets stock French items (passing them of as British as usual), I have seen it in Tesco, M & S, and Sainsbury

You've got your answer. Goose fat was often used as a rub for people with bronchitis. Don't know if it did any good. People have strange habits. The Swiss used to swear by hot onions in an old sock wrapped round the neck for sore throats.

Sainsburys do it in a can....mmmmmmm.....roast potatoes taste great done in this stuff!!
