Cinco De Mayo happens to be my birthday so any of these drinks are good, but mojitos are probably what I'll be drinking this year!!

3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 1/2 oz light rum
club soda

In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir thoroughly. Top with ice. Add rum and mix. Top off with *chilled* club soda (or seltzer). Add a lemon slice and the remaining mint, and serve.

Mojito!!! one of my favorites, and not just for cinco de mayo! so refreshing =)

Margaritas, Tequila sunrise, sangria, Mexican beer are all real good choices for Cinco..

If you have a couple of extra bucks, go to a restaurant supply store and rent a multimixer or just a frozen drink machine. The ones that have capability for more than one flavor are great. Have different flavors of frozen margs for your function. They are not that hard to operate and it makes the bartending much more easier.

I'm a bartender in Hilo, Hawaii at Paradise bar and grill, and I'm pushing Red Roosters tonight. It's actually Three 1 1/4 oz. shot glasses, taken in order. The first is tequila, the next sweet and sour, and the last is tomato juice. I know, it sounds disgusting, but it's actually good if taken in that order. The tomato juice (spicy is best) kills the tequila burn and coats the pallate. The sweet and sour gives you a margarita sensation after taking the tequila. A white tequila is best, because the colors will then match the colors of the Mexican flag. It sounds weird, but you gotta try it. It's good.
