I am throwing a wine and cheese party. please help?!


Question: Hello!
I am having a wine and cheese party for my Christmas party this year, because I think that will be really casual and still festive.
Can anyone recommend any good cheese recipes that they have personally tried? (like any baked brie or anything?)
Also, I am having people bring a bottle of their favorite wine, so that limits that control I have over what people pair up or try or what have you.
any suggestions for what cheeses are well liked by all, or go good with everything? Also, is there one kind of wine I should supply that it would be a real shame to do without?
I am a nube with this kind of thing, not a wine connoisseur by far, but I love throwing parties, and thought it would be fun to try something new.

Make sure your cheeses are about room temp and your wine is not to cold. Try some smoked Gouda or smoked mozzarella try some blue cheeses especially maytag or your different cheddars or goat cheeses. There are a million cheeses out there. Make sure you serve something that contrast with the cheese like fruit. Good luck.

on foodnetwork.com or allrecipes.com you can get some great recipes - one of my favorites with wine is a goat cheese with artichokes and several kinds of olives (baked). You should have a variety of sharper cheese flavors and mild cheese flavors - you want elegant that goes with anything! Wineconnoisseur.com has great cheese and wine parings - you may want to make suggestions as to types of wine for your friends. One of my favorite "newbie" wines is Menage a Trois (california wines) - there are a couple different ones (these are a mixed wine with 3 types of wine blended together). I also am recently in love with "Mommy's Time Out" - fun name and nice flavor for slightly developed palates. Make sure you get some or make some wine crackers - these cleanse the palate - that is remove the taste of what you just had - and are pretty cheap and easy. Have fun!

I dont have any recipes but as far as cheese that will go good with all, try for a gouda since it goes well with cabernet or zin and most likely someone will bring that type of wine. Also, a brie will go good with almost any white and roquefort will go good with any sweeter red.

Really, it's hard to recommend a cheese if you don't know what wine you will have, and vice versa. Check out http://www.gourmetsleuth.com/cpairing.ht... for a good wine and cheese pairing chart. Maybe you can get some ideas from that.

I would have different types of cheddar, Jeremy river is always a croud favorite. For wines you are going to want something versitile that will go witheveryones taste. Right now the Willimette Valley in Oregon is hot with Pinot Noir's or you may want to look at some northern California Pinot's like the BR Cohn which has a really strong nose but it's not too heavy, it is a medium to full red and goes great with a drunk monk wich is aged for 7 months in a brown ale and has a nutty flavoe. so I would look for something like that. If you or any of your guests are into heavy reds the Justin Isosolese Cab is amazing as well as the Medusa. You may also want to look for a mountain goat chz.

I always like velvetta cheese and rotel and some sausage melted w/some Frito's corn chips (scoops), can't go wrong there. I like the sausage logs to, have fun and enjoy!!
