Go ahead and add the honey when you start primary fermentation. Use the normal yeast that you would for your recipe. If and when that yeast runs out then repitch with Red Star Champagne.
It all depends on the yeast's alcohol tolerance. Check out what kind of yeast the recipe calls for to see what % it will ferment up to, and then take gravity readings to find out when that yeast is finished. When that yeast finishes, and the brew is not finished, that would be when you would want to pitch the Champagne yeast, which is tolerant up to 18%.

You'll need a wine yeast - Montrachet or Champagne will work.

You can use your regular beer yeast. I made a holiday spice beer for the holidays this year. The recipe called for 1 lb. of honey and yeast for making ale. It turned out just great.

i like cote de blanc. itll get you about 10% ABV.
by the way, what does one pound of honey have to do with it? meade is made with much more honey and usually has around 10% abv......

Use your regular stout yeast. If you get too much sweet taste and not enough ABV, pitch champagne yeast. Don't start with that. You want your beer to taste like stout, not champagne. As it is, the honey will give you a "dryer" taste than malt would.
