Jose Muldoon's is having their grand RE-opening on Cinco de Mayo in Colorado Springs. That will probably be THE happening place. (They've been closed for months for remodeling.)

Considering that May 5th is the Mexican St. Patrick's Day (as far as the US is concerned), I'd guess every bar will be serving tacos that day, and if they could find a way to dye the beer so that it had stripes of green, white, and red, they would. I can't wait until Joan of Arc Day becomes popular so that we can all go around eating women-shaped french fries.
