A lot of people will tell you different things about cheeses and wines. It is truly up to you to experiment with different types of cheeses to see what you like in particular with your merlot. Some like mild, some like stronger and some like one in the middle. See what you like and pair it with the merlot so you know what you like and what you don't. For starters, I would recommend a mild Monterey Jack that will not be overpowering and let you proceed on your own according to your own tastes in cheeses.

A mild cheese will go well with Merlot. You don't want any cheese so strong that will override the flavor of the wine. Try some Brie or Camembert served with fruit.

There are so many cheeses, try Gouda, or Greer(sp?), try going to a cheese store, they are very help-full..
