How do i make clear and shiny wine? All of wines i've made are blurry?!


Question: Hi folks, i made wine a couple of times at home. But it didn't work out, i mean it doesn't taste good, it's not tasty. Besides it's blurry and when i make apple's wine, it's so blurry i can't even look at the other side of the glass. I don't want that kinda of wine, i remember a friend of mine made wine at home and they were so clean and clear and shiny. So what do i gotta do?
By the way i use Bread Yeast on them, like 1 or 2 grams in 1.5 liter. Is that allright, let me know. And tell me how long does it take to make wine. Thanks a billion.

First, NEVER USE BAKER'S YEAST FOR HOMEBREWING... that's why it tasted so bad. You will want to use wine yeast for wine. Also, that could have been part of your clearing problem. You want to let the wine sit for a few months, long enough to clear.
If you have a local homebrew shop, check them out, or go to http://www.midwestsupplies.com or http://www.northernbrewer.com to pick up some wine yeast.
For homebrewing, depending on the wine, it will take 3-6 months before it's done fermenting, and another few months for bulk aging. You should let it sit in primary for 1-4 weeks (until primary fermentation is complete), then rack to secondary for a month or 2 until perfectly clear (you can read a newspaper through the carboy), then rack again into bulk aging for 3-6 months (or as long as you can wait).
There are several books on the subject, I can recommend a few if you wish. Feel free to email me if you have any further questions.

Only time will clear up your wine.
Store in a cool dark place for at least 1 year 2 years is better.
Bread yeast will never ferment a good tasting wine, you need to use a "special" wine yeast or your wine will always have a bad yeast taste

Time is your friend when it comes to wine. You can do a quick primary fermentation in plastic but you should rack to glass after two weeks. Keep racking to glass every few months for at least a year. Your wine will gradualy clear. There are also products that will precipitate out particulates.

NEVER use bread yeast. Packets of wine yeasts are cheap. Try Montrachet for general use.
