no. A drunk should get treatment. Tasting and over doing it are different. Yes some drunks may be beer tasters, but a lot of fat people are "food tasters" (i.e. samples at sams club).

I don't think he should get compensation. As I understand it, alcoholism isn't related to how much alcohol you drink but a disposition to become addicted. If so, he was an alcoholic all along. Also, surely he must have realised he had a problem when he needed to take his work home with him as it were.

If you are professional about it you study the beer, Head, Condition, Clarity - take a sniff to pick up the aromas of malt and hop and then taste a little, roll it all over your tongue - then spit it out. The tongue is a very sensitive organ and will detect sweetness, bitterness, saltiness and sharpness - there is no need to swallow and perhaps become an alcoholic through it.
