If a wine is specific for its own sort (like has characteristics typical for Chardonney), can you say it’s sorted? Or is it said in some other way?


Answers:
No, you don't say 'sorted'. You will sound bad. Impress your friends and tell them the wine 'is true to its varietal profile" then you can 'adorn' your description with: 'hints of ....., aromas of ...., nuances of.....) Hope this helps.
